These hearty, vegan tacos are quick and easy to make, a true godsend on busy weeknights. They are so tasty no one will miss the meat or dairy.

  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon ground coriander
  • ¼ teaspoon kosher salt
  • 1 lime, cut into wedges

  1. Combine roasted root vegetables, black beans, oil, cumin, chili powder, coriander, pepper & salt in a small pot over medium-low heat. Cover and cook until heated through, 6 to 8 minutes.
  2. Divide the beans among the tortillas. Top with the vegetables and avocado. Serve with lime wedges. Garnish with cilantro and/or hot sauce, if desired.
