Reduced-Sugar Banana Bread

Ingredients

    • Non-stick cooking spray
    • 1¼ cups all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • ½ cup Truvia® Brown Sugar Blend
    • ⅓ cup butter, softened
    • ⅓ cup (about 4 medium) very ripe bananas, mashed
    • ⅓ cup buttermilk
    • 2 large eggs
    • ½ teaspoon vanilla extract

Directions

  • 1 Preheat oven to 350°F. Spray 9x5x3 inch loaf pan with non-stick spray.
  • 2 Whisk together flour, baking powder, baking soda, and salt. Set aside.
  • 3 Cream together Truvia® Brown Sugar Blend and butter.
  • 4 Add mashed bananas, buttermilk, eggs, and vanilla extract to sugar/butter mixture until well combined.
  • 5 Lightly fold the banana mixture into the dry ingredients until just combined. The batter should be thick and chunky. Do not overmix.
  • 6 Transfer batter to loaf pan. Bake until golden brown and a toothpick inserted into the center of the loaf comes out clean (about 55 minutes).
  • 7 Allow to cool in pan for 10 minutes. Remove loaf from pan and transfer to a wire rack.
