Grilled Corn with Chipotle-Lime Butter

Fresh lime and smoky chipotles makes this compound butter the perfect match for sweet corn. When the corn season is over, try a bit melted on some grilled fish or chicken.

  • 4 ears fresh corn, husked
  • 2 tablespoons butter, softened
  • 1/4 teaspoon freshly grated lime zest
  • 1 teaspoon lime juice
  • 1/2 teaspoon minced chipotle chile in adobo sauce plus 1/4 teaspoon adobo sauce, (see Note) or 1/4 teaspoon ground chipotle pepper
  • 1/2 teaspoon kosher salt

  1. Preheat grill to high. Wrap each ear in foil. Place on the grill and cook, turning frequently, for 10 minutes. Remove from the grill and let stand in the foil while preparing the butter. Combine butter, lime zest, lime juice, chipotle and adobo sauce (or ground chipotle) and salt in a small bowl. Carefully unwrap the corn. Serve with the butter.
  • Note: Chipotle chiles in adobo sauce are smoked jalapeños packed in a flavorful sauce. Look for the small cans with the Mexican foods in large supermarkets. Once opened, they'll keep up to 2 weeks in the refrigerator or 6 months in the freezer.

Great! But questionable nutrition... I've made this recipe several times since coming across it, and the results seem to get better and better. It's light, fast, and offers a fair amount of heat. As a dietitian, I have to question the accuracy of the nutritional information, however. 1 serving is supposedly 129 calories. However, 1 ear of corn is typically 100 calories, and 1/2 tb butter is 50 calories, so each serving is much more likely to be in the 160-180 calorie range. Pros: Fast, Delicious

Best corn ever! Looking for a way to make corn without heating up the kitchen on a hot summer day? This recipe is a sure bet! Corn is easily prepared. The Chipotle-Lime Butter compliments the grilled corn so well and was such a big hit with our guests they spread it on their meat as well! Tip: we spread just a little of the Chipotle-Lime Butter on each cob before we grilled it, to let it soak up some of the flavours as it cooked. Pros: Easy to make, tastes great!

The taste sensation of the lime and chipotle in the butter on fresh corn is such a treat, it's hard to believe this is so easy to make. I used really good butter and super-sweet corn. I can hardly eat sweet corn any other way any more.
