Seriously best recipe on this website. Don't be afraid to make this, tastes so much better then the ingredients listed together would make you think. Terrific great combo of veggies. Used Imagine Brand no chicken chicken broth to saute the veggies instead of using oil. Got out my waffle iron and toasted whole sandwich in that for a change too--turned out great. Just a spray of oil on the waffle iron itself. Used 1/2 nonfat yogurt and 1/2 lite mayo. is a favorite and will make often.
Unbelievably good! We made it with homemade rye bread and it was incredible. I didn't change anything about the recipe and have no plans to do so next time. This is just perfect for lunch or dinner for the two of us.
SO GOOD! This is the first time I've reviewed a recipe but just had to say it's one of the best recipes I've made from this site and I've made a bunch. I make this all the time and even took the recipe with me when I went to visit my vegetarian son. Last night I made it even more vegetarian by substituting thick slices of roasted eggplant (from my garden) for the bread and it was just wonderful! Pros: Easy yummy Cons: None

I made these on little rye breads and brought as an appetizer to a party. I used low fat Thousand Island dressing in place of the Russian. What a hit! I will definitely be making these for our Superbowl party. Lisa St. Louis MO
My husband typically does the majority of the cooking but this is one recipe of mine that he loves (we both do!) We always enjoy it and make sure to make extras for lunch the next day. I never enjoyed swiss cheese before making this recipe (but note that you should use a good one such as Boar's Head b/c it does make a significant difference with low-fat cheeses). Also I use sliced baby bellas for the 'shrooms and like to mash the capers a bit when making the dressing to make the flavor of them stand out more. amy Mt. Sinai NY
I made this sandwich using Jarlsberg made from part-skim milk. The result was rich moist and flavorful. However my husband (who doesn't like mushrooms or spinach) was less enthusiastic. The sandwich was easy to make but the bread charred before i could finish dividing the spinach mixture between the two slices of bread. Next time i'll put the pan on medium-low. I loved this sandwich! If you are craving a real reuben I don't think this will satisfy your craving but for the flavors of a reuben in a similiar sandwich it is great. I used portabello mushrooms and would highly recommend them as they have a somewhat meatier texture than button mushrooms. Sally
Yum! I had planned on adding meat and taking out the spinach because it just seemed weird to me but I decided to give it a chance. I was very surprised. The only thing negative I can say is that it's very messy so plan accordingly!;p
This recipe is so amazing. I used Jarlsberg Lite and served sweet potatoes fries as a side - YUM. Like some of the other posters I am a vegetarian that often misses these types of hearty meals but this sandwich will make you forget about corned beef; plus it's a great way to pack in a few servings of vegetables!
