Even though this healthy breakfast burrito comes together in just 5 minutes, you can make this burrito even faster by skipping the skillet and combining the tofu, salsa, salt and pepper in a bowl and microwaving until hot, about 1 minute. Use soy cheese to make it a vegan burrito. Source: EatingWell Magazine, March/April 2013

Tips

Eat neat: Keeping the filling inside a wrap or burrito can be a challenge, especially if you're on the go. That's why we recommend wrapping your burrito in foil so you can pick it up and eat it without losing the filling, peeling back the foil as you go.

Bland I tried this out today. What I did was add the olive oil then the tofu. It took a while for it to get brown. Then I decided to add a few veggies and finally the salsa pepper and salt. Overall the tofu had a bit of flavor due to the salsa. If you are use to lots of flavor then this is not for you or you need to add a bit more salsa salt and pepper to your liking. Taste as you go! Pros: Good for you low cal good protein Cons: Bland needs more seasoning Read More
