In this refreshing sparkling-wine cocktail, Aperol—a bright red, mildly bitter Italian aperitif—is mixed with simple syrup and fresh lemon juice. If you can't find Aperol, Campari is an ideal substitute.

  • Simple Syrup
  • 1 cup sugar
  • 1 cup water
  • Cocktail
  • ½ ounce Simple Syrup
  • ½ ounce fresh squeezed lemon juice
  • ½ ounce Aperol
  • 4 ounces chilled sparkling wine, such as Prosecco
  • Orange twist for garnish

  1. To prepare simple syrup: Bring sugar and water to a boil in a medium saucepan, stirring frequently to dissolve the sugar. Let cool for 30 minutes and then refrigerate until cold, at least 1 hour. Makes about 1½ cups.
  2. To prepare an individual cocktail: Combine ½ ounce of the simple syrup, lemon juice and Aperol in a champagne flute. Top with sparkling wine and garnish with an orange twist.
  • Make Ahead Tip: Cover and refrigerate the Simple Syrup (Step 1) for up to 6 months.
