Fresh and tangy green beans Love this recipe! After steaming the fresh green beans I shocked them in ice water to hold their color then added them to the marinade. Big hit with rotisserie chicken and quinoa/rice. In fact the marinade is fabulous on the chicken too! Pros: Fast easy delicious
Fantastic change to heavy green bean cassarole I was looking for something lighter for Christmas dinner and came upon this one. It was great! Everyone loved it and my Sister left with a copy of the recipe in her hand. The recipe is easy to make (I steamed the beans) and I intend to keep this one in my recipe box
Use what you have on hand! I used lime juice dill spice from the pantry onion instead of shallots a squirt of brown mustard (but I did cook the onions w/the beans) and this was fabulous! Don't be scared to switch it up!
The dill vinaigrette is amazing. This dish is also great served cold the next day and I almost prefer it that way. We live very fit and healthy lifestyles and I am always looking for something new that fits into that. This definitely works.
My boyfriend and I halved this recipe and ate it with Eatingwell.com's Grilled Salmon with Tomatoes & Basil. Though we absolutely loved the salmon something was off with the green beans. The lemon juice made it a bit too sour and the combination of ingredients with the dill made my boyfriend comment that it tasted like I'd dumped the juice from a bottle of pickles on the green beans. I think it's probably just a matter of preference but I'd rather eat my green beans plain than with this marinade.
