Green Beans with Creamy Garlic Dressing

Inspired by a Lebanese pasta dish, we toss steamed green beans with garlicky yogurt for an easy side dish. Try it with roast lamb.

  • 1 pound green beans, trimmed and cut diagonally into 1-inch pieces
  • 1 small clove garlic, minced, or 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup nonfat plain yogurt
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon chopped fresh parsley, (optional)
  • Freshly ground pepper, to taste

  1. Place a medium bowl of ice water near the stove. Bring an inch of water to a boil in a large saucepan fitted with a steamer basket. Add green beans, cover and cook until tender, 6 to 8 minutes. Transfer the beans to the ice water to cool. Remove from the ice water with a slotted spoon and let drain on a kitchen towel; blot dry with another towel.
  2. If using fresh garlic, mash with salt using the back of a spoon until a paste forms. Whisk the garlic paste (or garlic powder and salt) with yogurt, oil, parsley (if using) and pepper in a large bowl. Add the green beans and toss to coat. Serve cold.

Good, but wrong proportions I loved the yogurt sauce this creates, and I use this ratio for all my garlic-yogurt creations. Great for veggie dipping sauce. I should have known this- and I'm sure many of you do- but you should add yogurt to beans gradually to desired consistency. I added it all at once and wow.. way too much. Just be careful. Great recipe! Start slow with the garlic if you don't like very much. Pros: powerful flavor, unique Cons: too much sauce for beans

My husband didn't like it, but I thought it was ok. I think it was the yogurt. It did have a nice garlic flavor though that wasn't over-powering.

Outstanding This is an old recipe that is deceptively simple, but the taste delivers a great surprise. It isn't necessary to mortar the garlic and salt, although that is the correct way to do it. If you crush the garlic and add the salt it will still turn out well (I have mede it both ways.) You might hesitate to use that amount of salt. Don't. It's all about balance and this is as perfect as they come. Enjoy. Pros: Quick, Delicious

Great recipe! Made this recipe with greek non-fat yogurt and thinned it out with the juice of half of a lemon. The addition of the lemon juice along with the fresh chopped parsley made this taste so fresh and delicious. My husband and I loved this and will make it again! I took the suggestion from another reviewer and served it along with EatingWell's curried chicken and brown basmati rice.
