We love how roasting brings out the sweet flavor of beets. Golden beets look especially pretty when tossed with the fresh herb and lemon seasoning mix, but any type of beets will work in this recipe. If you're a lemon lover, be sure to add the squeeze of fresh lemon juice after the beets are roasted.

  • 1½ pounds golden or red beets, trimmed and cut into 1-inch pieces or wedges
  • 4 teaspoons extra-virgin olive oil or canola oil
  • 2 tablespoons chopped fresh or 2 teaspoons dried herbs, such as marjoram, oregano and/or rosemary
  • 1 teaspoon freshly grated lemon zest
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 1 tablespoon lemon juice, (optional)

  1. Position rack in lower third of oven; preheat to 450°F.
  2. Combine oil, herbs, lemon zest, salt and pepper in a large bowl. Add beets; toss to coat with the seasoning mixture.
  3. Spread the beets evenly on a rimmed baking sheet.
  4. Roast, stirring once or twice, until the beets are tender and browned, 20 to 25 minutes. Toss the roasted vegetables with lemon juice, if using.

Used golden beets and it was delicious. Definitely add the lemon juice called for at the end. Yum! And not many weight watchers points!!??

This was an easy and versatile recipe. I didn't have a lemon, but had an orange and used it- was very good.

This is a delicious dish and simple to make. I used red beets and made this with fresh Rosemary. The natural sweetness of the beets was intensified when roasted. I recommend the squeeze of fresh lemon at the end as it enhanced the flavor even more. This is definitely one that will be a favorite at our house!

Delicious beets I made this with some golden beets I bought at my farmer's market. I'd never cooked beets before but thought that I would give it a try. I'm so glad that I did! Instead of turning on my oven in this heat, I prepared them in a foil packet and placed them on the grill for 20-25 minutes. My husband had never had beets before and was also very impressed with the fresh taste. I used fresh rosemary and basil from my garden. This is going to be a summer staple! Pros: Easy to prepare with few ingredients Cons: I can't get beets all year round

Great way to have beets! These are easy to make and taste delicious! I have never had roasted beets before and loved them. I did use lemon - and fresh basil the first time. The sweetness of the beets and sourness of the lemon is mouthwatering. Tonight I am using lemon and dried rosemary. Pros: delicious and easy

Yum! I just made this with fresh basil and then just some italian seasoning. It was really nice with the lemon!! I plan on eating cold tomorrow with my meal. Very nice! Very easy!
