This delightfully easy, and somewhat messy, sandwich packs a punch with sweet balsamic vinegar, artichoke hearts, red onion, provolone cheese and zesty pepperoncini. We love it for dinner as well as lunch. If you're packing the hoagies to take along, keep the ingredients separate and assemble right before eating to avoid soggy bread. Serve with tomato and cucumber salad.

  • ¼ cup thinly sliced red onion, separated into rings
  • 1 14-ounce can artichoke hearts, rinsed and coarsely chopped
  • 1 medium tomato, seeded and diced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1 16- to 20-inch-long baguette, preferably whole-grain
  • 2 slices provolone cheese, (about 2 ounces), halved
  • 2 cups shredded romaine lettuce
  • ¼ cup sliced pepperoncini, (optional)

  1. Place onion rings in a small bowl and add cold water to cover. Set aside while you prepare the remaining ingredients.
  2. Combine artichoke hearts, tomato, vinegar, oil and oregano in a medium bowl. Cut baguette into 4 equal lengths. Split each piece horizontally and pull out about half of the soft bread from each side. Drain the onions and pat dry.
  3. To assemble sandwiches, divide provolone among the bottom pieces of baguette. Spread on the artichoke mixture and top with the onion, lettuce and pepperoncini, if using. Cover with the baguette tops. Serve immediately.

This is so easy and flavorful! I made it once with no bread, just served it over romaine lettuce and used shredded Romano cheese instead of Provolone. I made it again using whole wheat hot dog buns. I added sliced Tofurky with the Provolone and toasted it before adding the remaining ingredients. It was awesome, both ways!

Had this today for lunch and definitely no complaints! I did add a pinch of salt with some fresh garlic to the ingredients. Also, instead of a hoagie I did a spinach wrap. Made enough for two days and can't wait till tomorrow to have another! Haha

Fantastic recipe quick, easy, and cheap. I used 10 year old aged balsamic vinegar and I recommend only using 1 Tbs.

This recipe was not only easy to assemble, but it was absolutely delicious! This is truly one of the best sandwich recipes I've had this year. All the flavors blend to make a very savory combo. It makes a very nice vegetarian option as well. Wonderful recipe and 5 stars all the way!!!

I'm in love Made this ahead of time for lunches this week. Chopped up the tomato mixture and put it in a container. Kept my lettuce and onion separate and assembled sandwiches at the office! Toasted the bread today and it's AMAZING! So happy...taking a break from eating to write this review! Pros: easy, lots of veggies, so delicious

Mouth watering vegetable combination! When I made this recipe for myself, My families eyes followed me to the table. All I have to say is it's a good thing I made plenty for everyone! Pros: Quick, Flavorful, Easy to make.

Most flavorful veggie sandwich yet This was by far the best vegetarian sandwich I've ever eaten. My fiance absolutely loved it, and he's a big meat eater. However, I did make a few little changes. I toasted the bread with the cheese on top, and I also used banana peppers instead of pepperoncini peppers. I think they gave it that extra kick without being too over powering. And finally I added black olives. umm ummm delicious. We will definitely be making this again. Pros: tons of flavor, quick, easy, cheap
