This is so easy and flavorful! I made it once with no bread just served it over romaine lettuce and used shredded Romano cheese instead of Provolone. I made it again using whole wheat hot dog buns. I added sliced Tofurky with the Provolone and toasted it before adding the remaining ingredients. It was awesome both ways!
Had this today for lunch and definitely no complaints! I did add a pinch of salt with some fresh garlic to the ingredients. Also instead of a hoagie I did a spinach wrap. Made enough for two days and can't wait till tomorrow to have another! Haha
This recipe was not only easy to assemble but it was absolutely delicious! This is truly one of the best sandwich recipes I've had this year. All the flavors blend to make a very savory combo. It makes a very nice vegetarian option as well. Wonderful recipe and 5 stars all the way!!!
I'm in love Made this ahead of time for lunches this week. Chopped up the tomato mixture and put it in a container. Kept my lettuce and onion separate and assembled sandwiches at the office! Toasted the bread today and it's AMAZING! So happy...taking a break from eating to write this review! Pros: easy lots of veggies so delicious

This hoagie is so delicous! It was so easy to make and everybody in my family was so surpised how delicous it was. They begged me to make it again. If you want to eat healthy this is one of the best things to make.
We totally loved this! The only thing I changed is I let the onions and the cut peppers marinate with the other veggies. Red onions tend to be on the strong side and I recently had another recipe that had marinated red onions and I knew it would work well. This would be easy to take on a picnic (bring hand wipes!) along with a whole grain baguette. It helped with our craving for a sub/hoagie/grinder!:)
I had never eaten artichoke hearts before and I was nervous to try them but this was a great recipe to finally try artichokes and now I love them. The best part is that these sandwiches are quick easy and didn't involve cooking which makes it a great hot weather meal. We did toast our bread though which helps them not get too soggy.
I am not vegetarian but could very well become one after eating this delicious sandwich! I did make minor adjustments but basically kept the recipe "integrity" as much as possible. I did not soak the onions and they were just fine and probably helped keep the filling drier. I used whole grain Kaiser rolls because the store's baquette bread was too hard and my teeth are too old. I have made notes that next time I will use a little more cheese a large tomato an additional tablespoon each of balsamic vinegar and olive oil. Thanks for this tasty recipe!
I am not a vegetarian but could easily convert to one after eating this devine sandwich! I made a few minor adjustments: (1) I did not soak the onion rings and they were just fine and likely that helped avoid extra moisture and juiciness. (2) I slightly increased the tomatoes vinegar and oil. (3) The baquette bread in the bakery was much to hard and my teeth are old (!) so I used Kaiser whole grain rolls and they were perfect. All in all this one's a keeper.
AWESOME! After my first bite I inhaled this sandwich. I love it when just a few simple ingredients can deliver such flavor. I didn't bother soaking the red onions. I think next time I'll add a few black olives. Yum!
This sandwich was DELICOUS! It packed in so much flavor without the extra calories and it's so great since it's so healthy! My kids beg for it every lunch. I personally love spicy things so I think a couple of pickled jalapenos or banana peppers would put a kick into it. Try toasting the bread with the cheese on it so it becomes melted! Don't be shy to make this sandwich your own!
This is fabulous!! I can see why everyone is raving & excited we LOVED this sandwich. I grilled the onion along with slices of zucchini & squash from the garden. Just spritzed them with olive oil & laid on the grill. I used fresh garden roma tomatoes (can you tell my garden is in?). Absolutely loved this recipe. Thanks EW.
Excellent sandwich! This is a very easy very tasty sandwich to make that is quite filling. I used banana peppers instead of Pepperoncini and also used red bell peppers instead of tomatos...delicious! Pros: Flavor easy to make filling Cons: nothing!
Awesome Hoagie This sandwich is AWESOME!!! I recommend buying the narrow or smaller whole wheat buns for this sandwich otherwise you'll get a whole lot of bread. Tempeh marinated in soy sauce and fried in olive oil makes a delicious vegetarian filling. Particularly good for those working out and in need of some extra protein! Pros: Quick tasty can be modified to suit Cons: A little more pricey than your typical homemade sand.
great sandwich! This is a good sandwich perfect for summertime when you don't feel like cooking. I added black olives and some turkey italian sausage for my hubby's while keeping mine veggie. It definitely helps to remove some of the bread so the filling will stay in the bread and most definitely put the cheese on the bottom so the bread doesn't get moist from the filling. This would also work well in a pita and I think I'll try the mixture with a little more dressing in some pasta. YUM! Pros: quick easy filling Cons: don't think so
Most flavorful veggie sandwich yet This was by far the best vegetarian sandwich I've ever eaten. My fiance absolutely loved it and he's a big meat eater. However I did make a few little changes. I toasted the bread with the cheese on top and I also used banana peppers instead of pepperoncini peppers. I think they gave it that extra kick without being too over powering. And finally I added black olives. umm ummm delicious. We will definitely be making this again. Pros: tons of flavor quick easy cheap
