Simple,Easy,Tasty,and Vegetarian I loved this sooo much. I've been trying to think of things to take to school other than rice & leftover pizza and that junk. This is perfect, it takes no time at all. It's very very filling. I think I would omit the onions next time because for me they felt too strong. Also the cheese adds a nice flavour but it's easy to omit. Pros: super fast & easy Cons: raw onion

Great if you Omit the Cheese!! This would be a FANTASTIC healthy recipe, without the cheese! I can't understand why cheese is added to an otherwise healthy recipe! Are you associated with the Dairy Industry??? Cons: CHEDDAR CHEESE!!!!

Great recipe Have made this many times, i keep coming back. Its fast and easy, my picky boyfriend even helped me make it he liked it so much. I tweak it sometimes but no changes are necessary Pros: Fast, tangy, tasty

Ingredients can even be found in Stockholm! A great success. We'll definitely make it again. For anyone else who's in Stockholm, Sweden, and looking for canned chipotles in adobo sauce, there is a store at the Skanstull subway exit called Extreme Foods and they have it, along with a bunch of other hot sauces. We are interested in adding more cilantro next time. Pros: Tastes good. Yummy. Easy to make. Cons: Could be a wee bit spicier/hotter.

Like a delicious Mexican restaurant at home! All that great Mexican restaurant taste without all those unhealthy trappings. A great summer dish b/c you don't use any heat (no oven, no stovetop, no microwave), except those delicious chipotles in adobo! I'll be making the slaw portion as a side dish to the portobello quesadillas also an Eating Well recipe. This is easily the most delicious recipe I've EVER made. Pros: Fast, tasty, no oven required

Delicious, easy, 2-yr old devoured it! I tried this recipe for the first time today, and it is absolutely delicious! Very easy to prep, and best of all, our 2-yr old, who can be a fussy eater at times, absolutely loved it -- he couldn't get enough! How great that I could get beans, avocado, cabbage, carrots and whole wheat (tortilla) into my son in one meal! This is going to become a staple for us. The only thing I changed slightly was to add a little extra oil, vinegar and chipotle than the recipe recommends as I thought the dressing was a bit scant, and we prefer spicier food. But otherwise, it is perfect.
