  • Bring a large pot of water to a boil. Cook pasta until just tender, 8 to 10 minutes or according to package directions. Drain.

  • Meanwhile, heat oil in a Dutch oven over medium heat. Add bacon and onion and cook, stirring occasionally, until beginning to brown, about 2 minutes. Add chicken, bell pepper, garlic, Cajun seasoning and pepper. Cook stirring, until the onion and bell pepper are beginning to soften, about 4 minutes.

  • Add flour and stir to coat. Add tomatoes and their juice; bring to a simmer. Cook, stirring often, until the sauce is bubbling and thickened and the chicken is cooked through, about 2 minutes. Remove from the heat. Stir in sour cream.

  • Stir the pasta into the sauce. Serve sprinkled with scallions, if desired.

Tips

We used a Cajun spice blend that contains salt. If you have a blend without salt (check the ingredients label), season the sauce with salt to taste.

Creamy Cajun Chicken Pasta This recipe is delicious. Even my husband loved it and he is not a fan of pasta. I think the fact that it had bacon in it won him over. Made this the other night and had friends over for dinner. They LOVED it as did I. I used minced garlic instead and went a little heavy as the previous poster mentioned. This is a great recipe. The flavor is very fresh and the cajun seasoning makes it just a lil spicy! I doubled -everything- except the chicken since a box of pasta is usually 14-16 oz. Loved it! Made this for the first time tonight. The name reminded me of my husband's fav dish at a well-known restaurant chain. I had printed it out awhile ago and just came across it today and was excited to try it. I loved it. I thought the flavors worked well together and I'm all about sneaking in some veggies undetected. Too Hot... I had to throw this out. It was just too hot for me and my husband. I used Tony Chachere's spice and I only put in a little over a tablespoon.
