Different but good This dish sounded interesting...so I gave it a try. Followed the recipe except used cooked chopped bacon instead of the pancetta and added it after the onion/garlic cooked. It was tasty good flavor we were a little disappointed that the eggs were so overpowered by the marinara. I would make it again it's an easy to prepare supper. Pros: Easy quick simple ingredients Cons: Egg gets overpowered by the marinara
Just OK From the great reviews I expected more. I realize that its eggs but there was nothing very interesting about it. Just tasted like eggs with a jar of sauce on them. I added the pancetta and could not taste it. I think I will stick with Huevos Rancheros for my mid week egg meal. Pros: Quick weeknight meal Cons: Nothing interesting
try adding beer to the tomatos My ex MIL made her Italian eggs like these using beer chopped tomato's peppers & onions I use the cans of diced tomatoes with onions & garlic & add peppers. The beer really adds to the flavor. We like them with fried or hash brown potato's or pasta. Pros: good for dinner or anytime.
Served this for Easter breakfast. Everyone loved it. Used fresh ingredients (tomatoes red & green pepper) instead of marinara sauce. No meat. No other changes. Served on hash browned potatoes (Simply Potatoes brand browned in a little olive oil salt & pepper). Amazing & simple.
This really was a great easy and very tasty dinner! I took the advice to make some hashbrowns on the side and I also did not use the pancetta. I did use a spicy tomato basil sauce to add some bold flavor to the mix and i really just lined the bottom of the pan with the sauce so it wouldn't be too overwhelming. I also only added some olive oil and fresh minced garlic before the sauce. Overall although it may not look traditional I proved my skeptics wrong and they can't wait for me to make it again!
Glad I tried it This was unusual but I figured people eat eggs with ketchup-- why not marinara? I'm glad I tried it. I overcooked the eggs the first couple times (I usually eat scrambled) but then I got it down. This was really flavorful and I will be making it again and again!

Yummy Delicious! Midnight Snack! Smelled YUMMY while I was cooking it it sounded so good when I read the recipe I knew I had to try it out right NOW! It's midnite;) I had no marinara but used a can of Italian flavored diced tomatoes mmmmmmm. It's even a tiny bit sweet. This will be a recipe I put in my recipe box and pass around to my older kids for their boxes. THANK YOU!! Pros: Reminded me why I needed to get my cast iron skillet back out acidic tomatoes brings out more iron and I need more of that! Cons: NONE?
