I picked this recipe for my LTC facility for the ingredients. A huge improvement from our last recipe which called for cream of mushroom soup. In response to EatingWell User the cholesterol content of a food is not as important as we once thought. It is your diet as a whole sat fat exercise stress and your level of inflammation that puts you at risk for heart disease. As a dietitian I don't even pay attention to the cholesterol content on anything at Eating Well. All recipes I've seen here can fit into a healthy diet.
Needed just a little tweaking As have others I tweaked this a bit. Added fresh crushed garlic to the sauteed leeks and after taking the broccoli sauce off the stove in addition to the Parmesan and mayonnaise I added 1/4 cup creme fraiche a tsp of curry powder and tablespoon of lemon juice. (I left out the thyme). I also put in 1/4 cup white wine I instead of sherry. The flavor was excellent and more like a traditional divan. The overall calorie increase was only 50 per serving and well worth it for the additional creaminess. Pros: Easy low calorie Cons: Needed more flavor
Chicken Divan-Not Low cholesterol! This has 76mg cholesterol which means it is NOT low in cholesterol as you show it to be. Not heart healthy either. To be low cholesterol it MUST be 50mg or less in cholesterol. Pros: Sounds delicious! Cons: Too high in cholesterol
Tasty and satisfying This was delicious -- the family and I all loved it. I followed suggestions from multiple review and doubled the mustard (DO IT! It would have been a little bland without that.) and added sliced mushrooms to the leeks (a nice addition). Otherwise made this exactly as written. It's a great dish. The chicken was tender and the favor of the broccoli was a terrific balance to the sauce. When I make it again (and I definitely WILL!) I might add just a little more flour... the sauce seemed very slightly thin. But in general this was a big winner and the entire household loved it. Healthy and tasty alternative Doubled recipe and shared meal with friends. Next time I Next time I will add 2 cloves minced garlic to leeks double pepper to 1 teaspoon and increase Dijon mustard to 3 teaspoons. For best flavor use fresh broccoli and use dry sherry versus cooking sherry. Definitely a keeper recipe!
I thought this was pretty good but not great. The mistakes I made were not cutting the broccoli up smaller and steaming it first (it was a bit on the raw side) and adding the full amount of thyme. The thyme was pretty overpowering so I would cut that in half. As others have suggested I will add mushrooms and lemon juice next time. I also used grilled chicken breasts the smoke flavor didn't really go with the rest of the dish. Pros: Healthy makes good leftovers Cons: NULL
Suggestions for ingredient use Two quick suggestions: First regular broccoli is less expensive and the stems can be shredded in a food processor. Add coleslaw dressing and even your kids will not know the difference. Second cook the chicken more quickly in a microwave. Put enough water in the bottom of a casserole dish to just coat it. Add the chicken cover and cook for about 3 minutes depending on the microwave oven and the size of the breast. The chicken is cooked through faster without browning as is called for in this recipe. If you are going to use the breast as entree other than for this recipe marinate first or season with whatever dry ingredients you like. Cheese and sauces must be added after cooking because they will run off.
Low fat comfort food Just made this tonight and we were surprised how good it was. We did not have sherry and did not want to purchase a bottle so we subbed with white wine. We both enjoyed this immensely and would make it again. I wouldn't mind adding some thinly sliced carrots and mushrooms too. Pros: Lighter and tasty
Delicious! This is delicious. The leeks while a pain to wash add a delicious taste. I added a little bit more dijon mustard than suggested. The second time I made it I sauteed mushrooms with the leeks-also delicious. Will be making regularly. Pros: Healthier than normal chicken divan and good enough to eat without a starch; cons: none.
Something tasted funny I made this last night to the letter of the recipe. I thought this was a good basic recipe and nice and creamy/comforting but I think the sherry or the thyme was a litlte overpowering. I will make this again but probably try w/ cheddar cheese instead and cut out the thyme. I may try with mushrooms too.
Good recipe but needs some doctoring Like some other readers I added mushrooms substituted onions for leeks and doubled the mustard. I also added garlic a LOT more salt (maybe 2 extra tsp) a dash of tabasco and about 2 tsp curry powder. I left the thyme out because of the curry. I also used whole milk instead of lowfat and would even consider using half and half next time since I'm not too concerned about overall fat content. Pros: Good basic ingredients Cons: Bland
Great! I made a few substitutes for things I didn't have in the house: white wine for sherry onion for leeks. I also used low - fat cheddar for half the Parmesan. My family really enjoyed this over rice. We didn't want to have noodles 2 nights in a row so we did rice. It was so delicious and creamy just like I remember from years ago!! I will definitely make this again and again! Pros: creamy cheesy Cons: leftovers were too tempting!
For my family this dish was too tangy and the flavor was not what we are used to. My husband was picking at his meal and neither of us finished the dish. Pros: Healthier version of the normal chicken divan I make. Cons: This was too tangy in my opinion.
Fantastic i followed some other tips and added mushrooms lemon juice double dijon mustard and the panko bread crumbs. had the whole wheat egg noodles but they could do with out easily and still be just as good....FANTASTIC reheated too Pros: great for any occasion Cons: couldn't find any
Good recipe. I cut it in half for the two of us. When I make it again I'll probably add some garlic and sambal oelek but that's just the way we like things in our house. I was dissapointed that you missed the opportunity to make some homemade stock. I used two small bone in skin on breasts and the usual suspects to make some stock while poaching the meat. I had lots of no sodium broth for this recipe and another bowl of soup later.
This is not chicken divan. It didn't look like chicken from looking at the ingredients but I trusted the recipe. Mistake. I missed the tanginess of the lemon juice and the solid (thick?) consistency in the original recipe. Only 5 tablespoons of flour for almost 3 cups of liquid which made for a rather soupy result. Bland flavor overall. This may be a good recipe but don't make it out to be chicken divan. It isn't.
This dish was very good. The consistency of the sauce was thick and a tad bland. I doubled the dijon to kick up the sauce which worked out great because that really helped develop all of the other flavors.
I was disappointed in this dish. I think the thyme was overpowering. It looked interesting when I read the recipe over but did not taste at all like I was hoping. I will not make again. I see someone said it was soupy. It was very thick. I had no problems with the consistency.
YUM! i thought this was pretty darn close to regular chicken divan - except that it used parmesan instead of cheddar... i doubled the recipe (so i could freeze half) and it turned out great! a few changes i made (here they're already doubled): i added 8 oz of sliced mushrooms into the pan with the leeks 2 tsp of minced garlic with the leeks italian seasoning instead of thyme and used asiago for half the parmesan (and i dumped all the cheese into the mixture to prevent that icky crust on top!)...i think doubling the dijon like everyone else says will make it even better!
So - So I'm glad we tried this but it's not something I would make again. It is a nice healthy version I served over whole wheat noodles and turned out nice and creamy/cheesy. However I would just prefer a roasted bone in chicken breast with broccoli on the side. I think in this recipe the broccoli overpowered the chicken and all the other combined flavors. Yummy and cheesy but a little bland It was yummy and cheesy but a little bland I'm not great at imagining what spice(s) would taste good in a recipe so if someone can think of something to try please let me know. I did a few changes to make it a little healthier: 1. I used fat-free milk instead of low-fat; 2. I used Safeway's O (organic) Vegetable Broth brand instead of chicken broth because it only has 10 calories per cup; 3. I bought a rotisserie chicken so I can skip step 1. And I paired it up with rice.
Very good - I'll make this again I have not tasted traditional Chicken Divan but my husband and I enjoyed this recipe. Per the suggestions of other reviewers I added sliced mushrooms and a little lemon juice. I also cooked the chicken with garlic and added some Panko breadcrumbs to the top of the casserole with the Parmesan cheese. Next time I will probably serve this with egg noodles but the dish is hearty enough without them.
