Absolutely delicious. Inadvertently didn't cover it but that was okay as it caused the sauce to thicken just a touch. Used both whilte sweet potatoes and garnet yams lovely color and flavor. Took about 35 mins to cook with the potatoes in 1.5 inch cubes. Stirred every 10 minutes.
Very good recipe. Note to people who use yams.... they are all sweet potatoes ((Ipomoea batatas) some varieties are lighter in color and some are darker. A yam is a large root vegetable that is starchy & fibrous (from the genus Dioscorea) found in Africa & parts of Asia though they are starting to show up in some markets in North America. If you grab one thinking they are the "sweet things" you'll be getting a rude surprise. If you notice on canned "Yams" the law requires them to also be labeled "Sweet Potato" Sorry just one of my bugs the whole thing causes confusion.
Delicious!! I make these sweet potatoes at least once a week.. they are soo GOOD. I don't even cover them. I put them on my cookie sheet too.. so the casserole dish isn't even really needed. Trust me. I keep them in a storage container for lunch the next day.. YUMM. Pros: Everything Cons: Nothing
Great with Thanksgiving Supper! I made these the night before and reheated as suggested on the day of. When I heated them again I added chopped pecans and thought they complemented the sweet potatoes well. Very similar to the glazed carrots with nuts. I 1.5x the recipe to feed 10 and had little leftover. Pros: make-ahead
Wonderful dish! I always use a full 1/2 lemon and some cayenne in place of black pepper to give it a slight kick to cut through the usual richness of typical holiday fare. My family is astonished that the entire dish contains only two tablespoons of butter....
The better choice for healthy! Made for Thanksging yesterday and these Sweet potatoes turned out AWESOME!! Will finish them off tonight and plan to make more tomorrow since I have extra sweet potatoes....had accidentally gotten over 5 pounds..I did double the sauce as I had read that suggestion in the comments and so glad I did! It really needs the extra juice. Also used orange juice instead of lemon. Added a wee bit of cinnamon. After the first 15 min covered they really only need to cook another 25-30 min.(not the 45 in recipe..unless you want a puree..lol) They were unbelievable! Better than what I used to make with the syrupy sugary cans adding more brown sugar and marshmallows. That was just unhealthy! I may add walnuts though.;)
I had 6 pounds of sweet potatoes so I loosely tripled the recipe. I used an oversized metal cookie sheet and it fit it all perfectly. I followed the directions exactly by starting it out covered then removing it and turning the sweet potatoes every 15 mins. They came out delicious and looked just like the picture. Great side dish and I can see there s definite room for your personal tweaks like maybe adding cinnamon nutmeg vanilla nuts etc like some other reviewers mentioned!
So simple and delicious! The hardest part was cutting the raw Yams! Next time I'm going to cook them a little to make them easier to cut. Also I used sugar fee maple syrup to accomodate a diabetic friend. I used a little more than the recipe called for! I can't imagine that they could taste any better.
