  • 2 tablespoons extra-virgin olive oil
  • ⅔ cup finely chopped onion
  • ⅔ cup finely chopped red bell pepper
  • ⅓ cup whole-wheat pastry flour
  • ⅓ cup all-purpose flour
  • 2 teaspoons baking powder
  • 1½ teaspoons chopped fresh oregano, or ½ teaspoon dried
  • 1 teaspoon sugar
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ⅓ cup low-fat milk
  • ⅓ cup crumbled feta cheese
  • 1 large egg, well beaten
  • 2 tablespoons tomato paste
  • 2 tablespoons chopped kalamata olives

  1. Heat oil in a large skillet over medium heat. Add onion and bell pepper; cook, stirring often, until the onion is tender, about 5 minutes. Transfer to a large bowl and let cool for 10 minutes.
  2. Meanwhile, preheat oven to 400°F. Coat a mini-muffin pan with cooking spray.
  3. Whisk whole-wheat pastry flour, all-purpose flour, baking powder, oregano, sugar, garlic powder and salt in a medium bowl.
  4. Stir milk, feta, egg, tomato paste and olives into the onion mixture. Make a well in the dry ingredients; add the wet ingredients and stir until just combined. Fill the prepared muffin cups two-thirds full.
  5. Bake the muffins until lightly browned, 13 to 15 minutes. Cool in the pan for 5 minutes before turning out onto a wire rack. Serve warm or at room temperature.
  • Make Ahead Tip: Store in an airtight container for up to 2 days. Serve at room temperature or reheat at 350°F.

Addictive! I baked these up, and they smelled great! I took a bite, thought the flavor was just so-so...but then I couldn't stop eating them. So there you go. Pros: cute, smells great Cons: lots of chopping

Came out as instructed but tastes just OK Looks pretty and was excited to serve. But, the flavor was just OK. Surprising cause the batter does taste like pizza with fresh oregano. But, backed, not my cup of tea. Maybe I should replace with ingredients that are not greek, although then it would not be healthy. Pros: Came out looking beautiful and perfectly moist Cons: The taste was just OK.

Recipe might need to be doubled to make 2 dozen These smell really great in the oven, however was disappointed that I barely got 17 sad looking mini-muffin bites out of the batter. In hindsight, should perhaps double the recipe as listed and then be more generous filling up the mini-muffin tins.

maybe better with a spread I made these for Healthy Lunch Fridays. They smell awesome, but only taste ok. They may be better with a spread, a dip, or with soup. Pros: healthy, easy to make, ingredients easily available, smells fragrant Cons: time consuming, no wow factor, bland

Interesting These are in the oven now, I'm excited! I made a couple of changes. I omitted the feta and olives and added tuna and mushrooms. Instead of making mini ones my batter spread to 6 normal sized ones which means 80 calories for 1. That's still amazing though and it will be filling I'm sure!

Cute Bites! These were tasty but a bit time consuming. They would be good with a soup dinner in a larger size and they are even better with goat cheese spread on them. Pros: Tasty Cons: a little time consuming

delicious These muffins are so yummy. Next time I make them I'll add some heat like red pepper flakes or chopped jalapenos. They would also be really good with a little chopped turkey pepperoni.
