Try a sweet glaze on beets or other root vegetables to help balance their earthy flavor. This easy recipe will work with steamed carrots, turnips or rutabaga too.

  • 3 tablespoons dark brown sugar
  • 2 tablespoons orange juice
  • 1 tablespoon unsalted butter
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 3 cups steamed cubed beets, ½- to 1-inch cubes (see Tip)

  1. Combine brown sugar, orange juice, butter, salt and pepper in a large nonstick skillet. Cook over medium heat until the sugar and butter are melted and starting to bubble. Stir in beets and cook until most of the liquid has evaporated and the beets are coated with glaze, 6 to 8 minutes. Serve hot or warm.
  • Tip: How to Prep & Steam Beets: Trim greens (if any) and root end; peel the skin with a vegetable peeler. Cut beets into ½- to 1-inch-thick cubes, wedges or slices.
  • To steam on the stovetop: Place in a steamer basket over 1 inch of boiling water in a large pot. Cover and steam over high heat until tender, 10 to 15 minutes.
  • To steam in the microwave: Place in a glass baking dish, add 2 tablespoons water, cover tightly and microwave on High until tender, 8 to 10 minutes. Let stand, covered, for 5 minutes.
  • No time to prep? Look for Melissa's brand Peeled Baby Red Beets in the produce section of many supermarkets. They're peeled, steamed and ready to eat and contain far less sodium than their canned counterparts.

My four year old loved this recipe! My four year old son gobbled this up. Need I say more? It was yummy. I am a working parent so my time in the evening is limited and precious. If I were to do it again I might prep and steam the veggies the night before and then saute them when I'm ready to serve. Overall it was easy and great. Pros: Straightforward and fool proof Cons: two steps

creative way to fix beets local beets from the farmers market this time of year were perfect for this recipe. The brown sugar added an extra flavor to the beets which complemented them well. Easy to make, too - I micowaved the beets Pros: this dish was scarfed up and I could have made more

Yummy! This is fantastic. I've made it with beets only and with a combination of beets and sweet potatoes (one time when I didn't have enough beets). Both ways were delicious, but I probably prefer the beet/sweet potato combo for the variety over just beets. My better half doesn't like beets, so he picked out most of the sweet potatoes. He ate them all in one meal. No leftovers for us that night.

Loved this. I usually roast my beets so this was a different way to cook them. They took 20-25 minutes to steam but I doubled the recipe and had a big mound of beets. No oranges or orange juice so I used Cointreau. Also used the same pot I steamed the beets in so less clean-up.

Organic beets, if you can't grow your own, are wirth the price in terms of flavor. They don't have that muddy flavor you get with regular grocery beets.

This was so good. normally beets tastes very earthy to me however the sweet flavor really did balance it. I will definitely make this glaze again. Also so simple!
