Creamy Spinach Dip

Try this light spinach dip made healthier with reduced-fat cream cheese, nonfat yogurt and low-fat cottage cheese instead of full-fat cheese, mayonnaise and sour cream. It will save you a whopping 84 calories and 10 grams of fat per serving when compared to traditional versions. Serve it with pita chips and crunchy vegetables or spread it on a sandwich.

  • 1 small shallot, peeled
  • 1 5-ounce can water chestnuts, rinsed
  • 1/2 cup reduced-fat cream cheese, (Neufchâtel)
  • 1/2 cup low-fat cottage cheese
  • 1/4 cup nonfat plain yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 6 ounces baby spinach
  • 2 tablespoons chopped fresh chives
  • Freshly ground pepper, to taste

  1. Pulse shallot and water chestnuts in a food processor until coarsely chopped. Add cream cheese, cottage cheese, yogurt, lemon juice, salt and pepper and pulse until just combined. Add spinach and chives and pulse until incorporated.
  • Make Ahead Tip: Cover and refrigerate for up to 3 days. Stir before serving.

A miss My family dubbed it a miss. There were parts of the flavor profile that were good, but it was more of a miss than a hit. Shallot and chestnut too strong and it just sat in the bottom of my processor and wouldn't mix.

A wee bit oniony so will do about 1/2 the shallot next time. It does need a bit of something to round out the flavor, needs a bit of fat or something like that. I will try adding a tsp of low fat mayo or miracle whip the next time around just to boost it up.

This recipe was absolutely delicious! Instead of a shallot I used green onion, I didn't use garlic like everybody else, and I used full fat cream cheese because the store was out of low-fat. I added a little bit of diced tomato to the food processor. I was skeptical about the cottage cheese, because I've never had it, but this recipe was delicious with it. I will definitely make this more often, but warning - it was hard to stop eating because it was so yummy!

I also used less shallot and added a clove of garlic. I didn't have any chives but the taste was still quite good. I used a handle blender as well and this was fine.

Might have been tasty without the shallot; it went uneaten after first bites. Way too much onion for what should have been a delicately flavored dip.

My family loved this dip--even our 2nd grader ate his spinach this way! I added a sprinkle of garlic salt at the end, because I was out of fresh garlic. Next time, we'll reduce the onion a smidge and add 1 clove of minced garlic. I'm hoping that will pump up the flavor. Overall, though, we loved it, and will definitely be making it over and over again! I bet it would look and taste great with chopped red pepper for the holidays! :)
