Great for that Mexican food craving!
My husband LOVES Mexican food, and was craving something spicy, Mexican, and tasty - but healthy and good for him. I saw this recipe & thought I'd give it a try. I added chili powder to the herbs for the chicken and threw a bit of cumin, coriander, and chili powder as well as some garlic into the beans. This ended up SO delicious! My husband LOVED it! The beans were absolutely delicious - creamy and flavorful with just a little spicy bite. Wonderful recipe! I used Great Northern Beans (organic vegetarian) for the beans & topped them with some extra sharp cheddar cheese. Highly recommend this - we will definately be having this again and again!! Oh, and the whole dinner took a total of 25 minutes flat from start to table; now THAT'S great!
