Nutty and slightly sweet sherry vinegar is a natural partner for strawberries. This composed salad makes a cool kickoff for dinner or a nutrition-packed lunch on its own.

  • 1/4 cup honey
  • 2 tablespoons sherry vinegar, or red-wine vinegar
  • 2 tablespoons finely chopped fresh mint
  • 1/4 teaspoon freshly ground pepper
  • Pinch of salt
  • 4 cups baby spinach
  • 1 small avocado, (4-5 ounces), peeled, pitted and cut into 16 slices
  • 16 thin slices cantaloupe, (about 1/2 small cantaloupe), rind removed
  • 1 1/2 cups hulled strawberries, sliced
  • 2 teaspoons sesame seeds, toasted (see Tip)

  1. Whisk honey, vinegar, mint, pepper and salt in a small bowl.
  2. Divide spinach among 4 salad plates. Arrange alternating slices of avocado and cantaloupe in a fan on top of the spinach. Top each salad with strawberries, drizzle with dressing and sprinkle with sesame seeds.
  • Make Ahead Tip: The dressing will keep, covered, in the refrigerator for up to 1 day.
  • Tip: To toast sesame seeds, heat a small dry skillet over low heat. Add sesame seeds and stir constantly until golden and fragrant, about 2 minutes. Transfer to a small bowl and let cool.

sweet, juicy and healthy! for someone like me who is not an avid greens eater, this recipe is going to be on my go to list regularly. I changed a few things, omitted avocado (I'm still working up to that, my only experience is guacamole (yuck). I didn't have any sesame seeds, so I substituted toasted poppy seeds. Truly satisfied my sweet tooth, healthily! Pros: easy

Delicious! I didn't have sherry vinegar so used sherry cooking wine instead. I also substituted 1/4c chopped walnuts for the sesame seeds. All the flavors go well with each other - the sweetness of honey/sherry dressing, tartness of the strawberry, nuttiness of the avocado and walnuts. Love, love, love! Pros: Very tasty - even those who don't like salads will love this.

My new favorite salad This is one of my favorite new recipes. The ingredient list is a weird combination but the picture looked good so I figured I would try it. I didn't have sherry vinegar so I used red wine. Wow, this was a fantastic recipe and all of the flavors compliment each other so well. My fiancee who hates avocado & sesame seeds reluctantly tried it and liked it so much he wanted me to make him a bowl. Fabulous! Can't get enough of this recipe! Pros: easy to make, healthy ingredients, delicious tasting, filling
