Turkey & Balsamic Onion Quesadillas

Not your traditional quesadilla, these feature deli turkey and Cheddar cheese, along with onions quickly marinated in balsamic vinegar. Serve with sauteed vegetables or a tossed salad for a quick meal.

  • 1 small red onion, thinly sliced
  • ¼ cup balsamic vinegar
  • 4 10-inch whole-wheat tortillas
  • 1 cup shredded sharp Cheddar cheese
  • 8 slices deli turkey, preferably smoked (8 ounces)

  1. Combine onion and vinegar in a bowl; let marinate for 5 minutes. Drain, reserving the vinegar for another use, such as salad dressing.
  2. Warm 2 tortillas in a large nonstick skillet over medium-high heat for about 45 seconds, then flip. Pull the tortillas up the edges of the pan so they are no longer overlapping. Working on one half of each tortilla, sprinkle one-fourth of the cheese, cover with 2 slices of turkey and top with one-fourth of the onion. Fold the tortillas in half, flatten gently with a spatula and cook until the cheese starts to melt, about 2 minutes. Flip and cook until the second side is golden, 1 to 2 minutes more. Transfer to a plate and cover to keep warm. Make 2 more quesadillas with the remaining ingredients.

I used Marie’s blueberry balsamic dressing and less onion. This recipe was quick, easy & delicious.

I heard processed animal products cause cancer and that dairy is not good for you. Also, where are the vegetables in this recipe other than a few onions? This months member focus newsletter where i found this recipe said we should be eating more fruits and vegetables and then features this recipe? That doesnt make sense! Please feature more recipes that feature fresh fruits and vegetables.

Too many onions I like red onions, but the recipe calls for too much onion. I ended up pulling half of mine off. Other than that, the dish was easy to make and tasted OK. Pros: Easy to make Cons: Onions

SO GOOD!! We used sweet onions instead, but everything else was by the recipe. Made four, and we each had two :) Seriously - so good. Will make this again and again. Pros: Everything about it is good. Cons: None

Good, but changed a few things I put half the red onion since it's a little strong for me and diced it up, but that's just my preference.

Good with chicken too We really liked these. I didn't have flour tortillas, so I used corn - 2 for each quesadilla. Put a tiny bit of canola oil on a griddle and heated them on both sides and then loaded one side up and covered with another one. I flipped them after a few minutes. I didn't have turkey either! But shredded chicken worked just fine. Next time I'll put a little salsa on too. Pros: quick, tasty

Easy and delicious I cooked these up today for a quick dinner since I had a lot of stuff to do. I was amazed at how great the flavor was with so few ingredients. I would definitely recommend making some of these. Pros: Great snack, great flavors
