Snow peas aren't just for stir-fries. Thinly sliced, their crunchy texture and sweet taste combine with a creamy Asian dressing to make this salad special.

  • 1 pound boneless, skinless chicken breast, trimmed
  • 1 14-ounce can reduced-sodium chicken broth
  • 3 tablespoons rice vinegar
  • 3 tablespoons reduced-sodium soy sauce
  • 3 teaspoons toasted sesame oil, divided
  • 2 tablespoons tahini, or cashew butter
  • 1 tablespoon minced fresh ginger
  • 2 cloves garlic, minced
  • 1 pound snow peas, trimmed and thinly slivered lengthwise
  • 2 tablespoons chopped cashews

  1. Place chicken in a medium skillet or saucepan and add broth; bring to a boil. Cover, reduce heat to low, and simmer gently until cooked through and no longer pink in the middle, 10 to 12 minutes. Transfer the chicken to a cutting board to cool. Shred into bite-size pieces. (Cool and refrigerate the broth, reserving it for another use.)
  2. Meanwhile, whisk vinegar, soy sauce, 2 teaspoons sesame oil and tahini (or cashew butter) in a large bowl until smooth.
  3. Heat the remaining 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add ginger and garlic and cook, stirring, until fragrant, about 1 minute. Stir in slivered peas and cook, stirring, until bright green, 3 to 4 minutes. Transfer to the bowl with the dressing.
  4. Add the chicken to the bowl with the peas; toss to combine. Serve sprinkled with cashews.
  • People with celiac disease or gluten-sensitivity should use soy sauces that are labeled "gluten-free," as soy sauce may contain wheat or other gluten-containing sweeteners and flavors.

Quite simple yet delicious My partner and I really enjoyed this recipe. I did throw in a little broccoli as it was in need of eating !! Will have to try the lime juice next time i think that would be very nice. But overall very good and will be making this again.

Delicious! Cooked this exactly as written and it was great, but the next day I put a splash of lime juice on the leftovers and it was even better. Pros: Amazing flavour and smell. Good leftover too. Cons: Bit labour intensive cutting up all the peas.

We loved this!!! I did substitute green beans and didn't shred them. Delicious and super easy.

I knew I would like this but was nervous serving this to my picky family. It was a huge hit! everyone liked it. I didn't have snow peas so I used green beans and everyone ate them! Quite pleased! Will definitely make this again

My husband raved about this one. All of Eating Well's recipes are usually rated tops by me, but this one really stands out. The most time consuming part of this meal was slivering the snow peas - I might try leaving them whole the next time. I used chicken tenders & shredded them after cooking. I might try adding mushrooms & serve over brown rice next time. Great stand-alone meal Judie

Love this. Took a little long to make the first time (I admit that maybe I took slivering the snow peas too seriously), but the second time I used pre-cooked chicken from the deli and it took 20 minutes. Makes amazing leftovers, and my boyfriend asks for it again and again. , New York, NY

Made this for DH and I and it was outstanding. Fully flavored and easy to do. Tasted like the best peanut chicken recipe I have had, but it was not peanut chicken. Loved the slivered snow peas. It was great as leftovers too. Anonymous, MD
