A no-bake, make-ahead treat, this perfect combination of fruit and nuts is a nutritious and delicious mouthful. Rolling them in shredded coconut gives them their festive look.

  • ¾ cup sugar
  • ½ cup dried cranberries
  • ½ cup pitted and snipped dates
  • 2 large eggs, beaten
  • ⅓ cup chopped pistachios, preferably unsalted
  • ⅓ cup chopped walnuts
  • ⅓ cup chopped pecans
  • 1 teaspoon rum extract
  • ¾ cup shredded coconut

  1. Combine sugar, cranberries, dates and eggs in a medium saucepan. Cook over medium-low heat, stirring constantly, until the mixture thickens, is pale yellow in color, registers at least 170°F on an instant-read thermometer and when a spoon is pulled through it, it leaves a clear trail. This will take 6 to 14 minutes, depending on how hot your stove's "medium-low" setting is.
  2. Remove from the heat; stir in pistachios, walnuts, pecans and rum extract. Let stand until cool enough to handle, about 45 minutes.
  3. With damp or lightly oiled hands, form the mixture into 1-inch balls (about 1 generous teaspoon each). Roll each ball in coconut. Place the finished balls on a baking sheet lined with wax paper and store in the refrigerator.
  • Make Ahead Tip: Place on wax paper; store in an airtight container in the refrigerator for up to 5 days or freeze for up to 1 month.
  • Storage smarts: For long-term freezer storage, wrap your food in a layer of plastic wrap followed by a layer of foil. The plastic will help prevent freezer burn while the foil will help keep off-odors from seeping into the food.

Yummy These turned out surprisingly well--my expectations were low, and I was pleasantly surprised. Making the egg mixture was a lot like making pecan frosting for German Chocolate Cake, just be patient. I, of course, was too impatient to wait 45 minutes for them to cool, but you actually DO need to wait 45 minutes or they won't form into balls. Greased hands were key, and I found it easier to roll all of the balls first and then roll them in the coconut last--that way I wasn't going back and forth with coconut sticking to my hands. The only problem is that they are too sweet--maybe they'll be less sweet cold from the refrigerator? I added a couple handfuls of oats to temper the sweetness, and the balls still rolled just fine. I imagine you could substitute/add a lot of delicious ingredients to change things up--dried apricots maybe? Roasted sunflower seeds? Pros: Lots of delicious ingredients Cons: Too sweet

Awsome Took these to a bible study Christmas party and they were a hit! I found that when I used Crisco on my hands I had an easier time with the process of shaping & rolling in coconut. This picture is exactly as they turn out, very pretty. Pros: Very Pretty
