  • Whisk oil, cilantro, lime zest, lime juice and salt in a large bowl. Set aside 3 tablespoons of the mixture in a small bowl to use as dressing. Add shrimp, jalapenos and plums to the remaining marinade; toss to coat.

  • Preheat grill to medium-high.

  • Make 4 kebabs, alternating shrimp, jalapenos and plums evenly among four 10-inch skewers. (Discard the marinade.) Grill the kebabs, turning once, until the shrimp are cooked through, about 8 minutes total. Drizzle with the reserved dressing.

Amazing first course or main! I tweaked the marinade. Added rum (or tequila). I used a BBQ grill caged designed to take an entire fish fillet rather than kebob skewer. This let me do 2 pounds of prawns at one alternated rows of jalapenos plums and prawns that fillet the entire cage. Rotated cage on grill a few times for even cooking. They were amazing! A very flexible recipe! These kebabs are super quick and super flexible. You could use any pepper your family favors and most seasonal fruits. We have tried them with scallops and they were lovely.
