Toss quick-cooking shrimp, juicy summertime plums and zesty jalapeños with a simple cilantro-lime marinade for a deluxe meal in minutes. If you like, use peaches or nectarines in place of the plums and red or green bell peppers for the jalapeños.

  • 3 tablespoons canola oil, or toasted sesame oil
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon freshly grated lime zest
  • 3 tablespoons lime juice
  • 1/2 teaspoon salt
  • 12 raw shrimp, (8-12 per pound), peeled and deveined
  • 3 jalapeño peppers, stemmed, seeded and quartered lengthwise
  • 2 plums, pitted and cut into sixths

  1. Whisk oil, cilantro, lime zest, lime juice and salt in a large bowl. Set aside 3 tablespoons of the mixture in a small bowl to use as dressing. Add shrimp, jalapenos and plums to the remaining marinade; toss to coat.
  2. Preheat grill to medium-high.
  3. Make 4 kebabs, alternating shrimp, jalapenos and plums evenly among four 10-inch skewers. (Discard the marinade.) Grill the kebabs, turning once, until the shrimp are cooked through, about 8 minutes total. Drizzle with the reserved dressing.

Amazing first course or main! I tweaked the marinade. Added rum (or tequila). I used a BBQ grill caged designed to take an entire fish fillet rather than kebob skewer. This let me do 2 pounds of prawns at one, alternated rows of jalapenos, plums and prawns that fillet the entire cage. Rotated cage on grill a few times for even cooking. They were amazing! Pros: SImple to prepare, economical, easy to source ingredients. Cons: Really need to marinade ahead of time so requires pre-planning.

A very flexible recipe! These kebabs are super quick and super flexible. You could use any pepper your family favors and most seasonal fruits. We have tried them with scallops and they were lovely. We have used peaches now that they are in season and have used poblanos to vary the flavors. It's one of the few recipes my husband wants every week in Summer. Pros: Flexible, pretty, healthy, quick, Summer-on-a-stick Cons: none

Really yummy and quick. I made some with the jalapeno and some with red pepper for my husband who didn't want the kick. Both were good, the peppers and plums when eaten in the same bite were delicious.

My wife (who rarely cooks) made this simple dish last night. The plums suck up the jalapeno spice nicely and char up perfectly on a hot grill. Served over some rice (with jalepeno and lime also). Well done Kelly!

Wonderful Flavor! The plums with the jalapenos were perfect together. If you don't mind spice you MUST try this recipe. I put mine on a bed of avacado, sliced cherry tomatoes, cilantro, lime, and lettuce mixed together.
