Couscous, which is actually a type of tiny pasta, makes an almost-instant side dish. Happily, the whole-wheat variety is just as fast to prepare as regular couscous. Lemon zest is a delicious accent to nutty Parmesan in this Italian-inspired couscous.

  • 1 14-ounce can reduced-sodium chicken broth, or vegetable broth
  • 1/4 cup water
  • 2 teaspoons extra-virgin olive oil
  • 1 cup whole-wheat couscous
  • 1 1/2 cups frozen peas
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon freshly grated lemon zest
  • Salt & freshly ground pepper, to taste
  • 1/2 cup freshly grated Parmesan cheese

  1. Combine broth, water and oil in a large saucepan; bring to a boil. Stir in couscous and remove from heat. Cover and let plump for 5 minutes.
  2. Meanwhile, cook peas on the stovetop or in the microwave according to package directions.
  3. Add the peas, dill, lemon zest, salt and pepper to the couscous; mix gently and fluff with a fork. Serve hot, sprinkled with cheese.

Not my favorite way to spice up couscous I was hoping that the parmesan cheese would be the main flavor of this dish, maybe a little less lemon and dill and something different. It needed a more salty ingredient or something. Pros: Not bland like normal couscous, very nutritious/healthy Cons: The lemon and dill overpower and don't make a good pair to the couscous

AMAZING!!! This dish is incredible!! I've made it twice already! I used Stelline pasta (tiny star shaped pastas) instead of couscous. It turned out perfect. Even my husband who is not very keen on healthy dishes loved it! Tonight I am making this same dish except I'm doing it stuffed pepper style! Yum, can't wait!!! Pros: Easy, quick, healthy and yummy! Cons: None!!

Great recipe! This recipe is delicious -- it took very little effort to make and was done in less than 10 minutes. I bought a huge jar of whole-wheat couscous and I have been finding all kinds of easy recipes to make with it -- it cooks fast, and it's good for you! I also found sodium-free chicken boullion which I mix with hot water and use in place of canned chicken broth, so it adds delicious flavor but no sodium to this recipe. Pros: Quick, easy, delicious Cons: none

Absolutely WONDERFUL! Having only discovered couscous in the last year or so, I am a BIG fan of this unique ingredient. And pairing it with lemon? GREAT! Served this recipe tonight with a dry-aged t-bone steak, using the tri-color couscous, and the pairing worked very well. I'll be looking for more couscous recipes to try!

Great recipe. I used a scant cup of couscous, because it was all that was left in the package, but used the full amount of liquid, because I had already measured it, and that lent the recipe a nice risotto-like texture. I added 4 oz of cooked, shredded turkey and 2 carrots, sliced into rounds and steamed, to make it a one pot meal. Definitely will be making this one again.

This recipe is very easy, healthy and tasty! I easily found whole wheat couscous by Fantastic in my grocery store. I had to substitute 1Tbls of dried dill for 2 Tbls of fresh. My husband and my ever so selective 17 year old approved and asked for more! Go UVM Cats!

I could not find whole-wheat couscous at the regular grocery store, and so used regular and this recipe was very delicious. Hard to believe it is healthy! I am going to pick up some whole-wheat couscous at the co-op and keep this one in my regular rotation.
