Great Protein Dish
Who cares about the calories when you have all that protein! Great dish that is so versitile to add meat or other veggies etc -- love the texture of quinoa and always looking for new recipes.
I thought this was a little blah-second time I made it used 1/2 cup white wine and 1cup broth, only 1.5tbs lime juice, 4-5 shakes of the garlic salt, 3 shakes of paprika and cayenne pepper. Not too hot but added a nice flavor. Also, don't skip the toasting part of the pepitos - really makes a difference. Could sub w/pecans, walnuts etc.
Pros: quick, easy ingredient list, very versitile
Cons: little bland
