This was great - I made it for a buffet lunch made the day before and served at room temperature - it was a big hit. Even making 2 though didn't take 40 minutes - you're looking at more like 10 minutes each. Anonymous Oshawa ON
Recipes for 6 are not helpful for me. It is easier to take a recipe for 1 and multiply by 2 3 4 5 or 6 etc Did not make this because it's not so easy to divide all ingredients by 6 4 etc. Anonymous Oakville ON
I would have to agree with the person who commented that recipes for 6 are not helpful. I came to this recipe from a link within an article called 'What does a 1 500 calorie day look like?' and found the info in that article very useful. Generally though people who are watching what they eat are doing it alone or perhaps as a couple.
This dish made my brunch a HIT! The sweetness of the red bell peppers complimented by the saltiness of the goat cheese really make this dish. PS. anything with goat cheese is amazing! PPS. Red Pepper & Goat Cheese Frittata I added artichokes and mushrooms to the receipe. My husband and daughter loved it. Made two from the recipe. Will be making it again real soon. Give this receipe a thumbs up. Pros: Quick easy beautiful presentation and tasty! Cons: It dissappeared too quickly
Great recipe! I didn't have scallions on hand so I used about 1/2 cup of sliced white onion and sauteed with the red pepper strips for a few minutes (just long enough to soften) before adding the egg mixture. I can't wait to try other variations! Pros: Quick easy and you can easily sub other ingredients you have on hand Cons: None
