Enjoy this crunchy, refreshing alternative to mayonnaise-based coleslaw on a taco or on the side.

  • 6 cups very thinly sliced green cabbage, (about ½ head) (see Tip)
  • 1½ cups peeled and grated carrots, (2-3 medium)
  • ⅓ cup chopped cilantro
  • ¼ cup rice vinegar
  • 2 tablespoons extra-virgin olive oil
  • ¼ teaspoon salt

  1. Place cabbage and carrots in a colander; rinse thoroughly with cold water to crisp. Let drain for 5 minutes.
  2. Meanwhile, whisk cilantro, vinegar, oil and salt in a large bowl. Add cabbage and carrots; toss well to coat.
  • Make Ahead Tip: Cover and refrigerate for up to 1 day. Toss again to refresh just before serving.
  • Tip: To make this coleslaw even faster, use a coleslaw mix containing cabbage and carrots from the produce section of the supermarket.

needs work --- not spicy enough --- try adding some red onion, or green onions, maybe some pico de gallo, &/or please some kind of chili, flakes, hot sauce, adobo sauce with jalapeño peppers ---- something!

Quick & Easy Quick to make ... I added a pinch of pepper flakes to add a little spice. I have passed along to friends and family that like to eat healthy.

Used the pre-made bag of cabbage, added salsa instead of diced tomatoes and added jalapenos....DELICIOUS!

Love it! We love this as is. But for those looking for a little sweetness, we tried adding jicama to it yesterday. I thought it was a nice addition and all three kids loved it that way. Pros: Great alternative to mayo filled coleslaw

Nothing Special What makes this Mexican, the cilantro? We found it so boring! I took the reviews of others and added, tomatoes, jalapeno and a little lime, now that made it Mexican and so much better! Pros: It's the base for add ins

Great Tex Mex side Great side dish! We love Asian/Sesame Coleslaw, and now love the Tex Mex version! We added 2 diced, partly seeded jalapenos (we love spice), cumin, and some zero calorie sweetener. We had shrimp tacos with it, but next time could put it right inside the taco! Pros: No mayo, easy, quick

Best ever non-mayo slaw I add thinly sliced green onion. This is a one of my standard recipes for slaw and I use it regularly in my Cafe. Pros: Light and fresh- no mayo Cons: none
