  • 1 pound frozen spinach
  • 2 cloves garlic, minced
  • 2 teaspoons extra-virgin olive oil
  • 1/3 cup low-fat milk
  • 1/3 cup reduced-fat mayonnaise
  • Salt & freshly ground pepper, to taste
  • 1/4 cup seasoned breadcrumbs
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 teaspoon extra-virgin olive oil

  1. Preheat oven to at 450 °F. Coat a gratin dish with nonstick cooking spray.
  2. Heat oil in a medium skillet over medium-high heat. Add spinach and garlic and saute until fragrant. Remove from heat; stir in milk and mayonnaise. Season with salt and pepper.
  3. Place the spinach mixture in the prepared baking dish and top with breadcrumbs, Parmesan and oil. Bake for 10 to 15 minutes.

Even my husband who usually despises spinach liked this. Used frozen spinach and it was super easy. This will definitely be in our rotation. Pros: NULL Cons: NULL

Wonderful break from the ordinary I loved the idea from another reader who substituted Hummus for the mayo. I did that and I also added minced shallots because I had a piece in the frig that needed using. I will definitely make this again. Pros: Tasty, crunchy top Cons: Adds a few calories to plain spinach

Wonderful side dish I also used 1 lb. of fresh spinach, 2 cloves garlic (minced), 1/4 c. skim milk & 1/4 c. spicy hummus -- instead of the mayonnaise -- used only 2 T. bread crumbs along w/2 T. parmesan. It was absolutely delicious & will make over & over again, but will have to double or triple recipe (when rest of kids are home). There was just enough for myself, husband & son (of course, they had much bigger servings because it's so good!! I wanted more, but, I'm trying to watch my calorie intake :) for a while.
