Wonderful side dish
I also used 1 lb. of fresh spinach, 2 cloves garlic (minced), 1/4 c. skim milk & 1/4 c. spicy hummus -- instead of the mayonnaise -- used only 2 T. bread crumbs along w/2 T. parmesan. It was absolutely delicious & will make over & over again, but will have to double or triple recipe (when rest of kids are home). There was just enough for myself, husband & son (of course, they had much bigger servings because it's so good!! I wanted more, but, I'm trying to watch my calorie intake :) for a while.
