In this healthy cheese toast recipe, crusty bread is topped with a touch of sweet jam, salty blue cheese and crunchy nuts for a perfect soup pairing or an easy snack.

  • 1 diagonal slice baguette ( ¼ inch thick), preferably whole-wheat
  • 1 teaspoon fig jam
  • 1½ tablespoons blue cheese ( ½ ounce)
  • 3 whole walnuts, toasted and coarsely chopped

  1. Toast bread. Top with jam, cheese and walnuts. Heat in toaster oven (or broil) to melt the cheese, if desired.

NOT FOR DIABETICS While this may be a healthy recipe for some, diabetics must watch carbs and sugar. Bread and jam are on the no no list. This is delicious - just not diabetic friendly. Pros: Delicious Combination Cons: Diabetics need to avoid carbs and sugar
