Pimiento-Cheese Patty Melt for Two

2 tablespoons grated onion
1½ teaspoons Worcestershire sauce
½ teaspoon paprika
¼ teaspoon garlic powder
⅛ teaspoon salt
⅛ teaspoon ground pepper
8 ounces lean ground beef
¼ cup shredded sharp Cheddar cheese
1 tablespoon reduced-fat mayonnaise
1 tablespoon chopped jarred pimientos
1 tablespoon chopped scallions
2 slices whole-wheat country bread, toasted
1Combine onion, Worcestershire, paprika, garlic powder, salt and pepper in a medium bowl. Add beef and gently knead together. Do not overmix. Form into 2 burgers, about the same size as the bread you're using.
2Coat a medium nonstick skillet with cooking spray and set over medium-high heat. Add the burgers and cook, turning once, until just cooked through, 8 to 10 minutes total.
3Meanwhile, preheat broiler to high. Combine cheese, mayonnaise, pimientos and scallions in a small bowl. Toast bread.
4Place toast on a baking sheet. Top each piece with a burger and half the cheese mixture. Broil until the cheese starts to brown, about 2 minutes.
