Bitter Greens Salad with Anchovy Dressing

“Here's a simple green side salad recipe that matches bitter greens like escarole and radicchio with a pungent anchovy dressing. You could also use frisée, arugula or even mesclun greens. It's great with pizza or as a light side salad.”


    • 2 tablespoons sherry vinegar
    • 2 tablespoons extra-virgin olive oil
    • ½ teaspoon anchovy paste or minced anchovy fillet
    • 4 cups thinly sliced bitter greens, such as radicchio and/or escarole
    • ⅓ cup shredded Asiago cheese


  • 1 Whisk vinegar, oil and anchovy in a large bowl. Add greens and Asiago; toss to coat.
