Pork & Snap Pea Lo Mein

Lo mein is a Chinese restaurant takeout favorite that's easy to make at home. This lo mein recipe features lean pork loin chops and snap peas, but snow peas or asparagus work well too. Serve with shredded radish and cabbage tossed with rice vinegar.

  • 8 ounces whole-wheat spaghetti
  • 1/3 cup reduced-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 2 teaspoons cornstarch
  • 1 teaspoon sugar
  • 2 tablespoons canola oil
  • 2 cups snap peas, trimmed
  • 12 ounces boneless pork loin chops or tenderloin, trimmed, cut into thin strips
  • 3 cloves garlic, minced
  • 3-4 scallions, sliced

  1. Cook pasta in a large pot of boiling water until just tender, 8 to 10 minutes or according to package directions. Drain.
  2. Combine soy sauce, rice vinegar, cornstarch and sugar in a small bowl.
  3. Heat oil in a large nonstick skillet over medium-high heat. Add snap peas and cook, stirring frequently, until beginning to soften, about 2 minutes. Add pork and cook, stirring, until no longer pink on the outside, about 2 minutes. Add garlic and cook, stirring, until fragrant, about 30 seconds. Stir the soy sauce mixture, pour into the pan and cook, stirring, until thickened, 30 seconds to 1 minute. Remove from the heat. Add the pasta to the pan and toss to coat with the sauce. Serve topped with scallions.

Good, healthy food I made this last night, it took one hour total from starting to chop to setting on the table. I cut back the vinegar as suggested by everyone (1.5 TBLS) , added 1 TBLS of Asian garlic pepper sauce (comes in a jar in the Chinese food section) LOTS more garlic as we love it, halved the amount of snap peas and added some broccoli and mushrooms to bring the veggies up to 2 cups. Towards the end I separated out some for leftovers then added shredded napa cabbage and shredded carrots to the pan, warmed and served with garlic Parmesan bread. Very good meal and lots of leftovers. When I have spaghetti-type leftovers, I like to heat a small cast iron skillet in the toaster oven, swipe with olive oil when it's hot, then dump in the spaghetti leftovers to warm up. The hot skillet gives the bottom and sides some crunch. Pros: Easy to make, fresh ingredients

Needs oyster sauce A shake or two of oyster sauce added to the sauce will make a world of difference. It's a little extra salt and sugar, but still way healthier than Chinese takeout. Pros: Easy Cons: One-dimensional

This was just OK. I followed the recipe exactly. Not the best thing I ever ate but it was quick and easy. I'll make again with the added veggies that other reviewers recommended. Pros: Quick, Easy, Cheap Cons: NULL

BOMB-DIGITY Used Sesame seed oil in place of canola and reduced the rice vinegar to 2 tablespoons. Added a few other veggies and this was aMAzing! Definitely going to make this again. Thank you Eating well! Pros: EASY TO MAKE

Not bad, not great i used 2 T. vinegar like other suggestions and added carrots, napa cabbage, and onion. this was good, but nothing special. will stick to a stir fry recipe i use for whole foods, which is very similar. Pros: easy

Easy and Great Flavor I've made many stir fry's and this was the easiest! Just a few ingredients and full of flavor. I thought the amount of soy sauce would be too much but after reading other reviews I made the recipe as written. The balance of flavors was right on. We like things a little spicy so I added crushed chili flakes. Also, marinated the pork in a couple tablespoons of sauce for about 30 minutes. Next time will add more veggies...shredded carrot, napa cabbage. Pros: Easy

Easy and tastes great Used chicken instead of pork and added more vegetables like they do at the restaurant... all we were missing was the egg roll and fortune cookies :). The soy sauce smelled very strong as it was cooking but the taste was very balanced. Pros: Easy

Good substitute for takeout I thought this was tasty. I added more vegetables to the snow peas: broccoli, nappa cabbage, carrot. My husband likes it a little sweeter, so he added a little agave to his dish. Next time I make it, I'll reduce the vinegar to 2 Tbs. Cons: Too much vinegar
