Here's a super-simple zucchini bread recipe. The addition of chocolate chips makes it more like a dessert than a breakfast, but you can enjoy it anytime. Skip the chocolate and try it with toasted walnuts or raisins if you prefer. Freeze 2-cup portions of shredded zucchini so you can make zucchini bread all year long.

  • 3/4 cup low-fat milk
  • 2 large eggs
  • 3/4 cup sugar
  • 1/3 cup canola oil
  • 1 teaspoon vanilla extract
  • 2 cups shredded zucchini (about 2 small zucchini)
  • 2 cups white whole-wheat flour (see Note)
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

  1. Preheat oven to 350 °F. Coat a 9-by-5-inch loaf pan with cooking spray.
  2. Whisk milk, eggs, sugar, oil and vanilla in a medium bowl. Stir in zucchini. Combine flour, baking powder, cinnamon and salt in a large bowl. Add the wet ingredients and chocolate chips to the dry ingredients; stir until just combined. Transfer the batter to the prepared pan.
  3. Bake until golden brown and a wooden skewer inserted in the center comes out clean, 50 minutes to 1 hour. Cool in the pan for 10 minutes, then turn out onto a wire rack. Let cool for at least 1 hour before slicing.
  • Make Ahead Tip: Wrap and store at room temperature for up to 2 days or freeze for up to 3 months.

  • Note: White whole-wheat flour, made from a special variety of white wheat, is light in color and flavor but has the same nutritional properties as regular whole-wheat flour. It is available at large supermarkets and natural-foods stores and online at bobsredmill.com or kingarthurflour.com. Store it in the freezer.
  • Storage smarts: For long-term freezer storage, wrap your food in a layer of plastic wrap followed by a layer of foil. The plastic will help prevent freezer burn while the foil will help keep off-odors from seeping into the food.

I really liked this bread and it came together pretty quickly, even with hand-grating the zucchini! Didn't add Choc Chips, so my kids thought it was only so-so. Next time I'll add them for sure because it's quite hearty and healthy otherwise! Changes: I used 1/2 C sugar and found it sweet enough. Added some flax meal just b/c I'm throwing it in all my baked goods these days.

too much baking soda It is delicious except too much soda. I should have known from the ingredient list, but sometimes I forget that recipes can have errors. Next time, I'll only do 1 tsp of soda. Oh well, with butter or peanut butter it is edible. Pros: moist Cons: too much soda

Wonderful, husband approved! Super healthy too! I used regular white flour and I used mini and regular sized chocolate chips. I baked it in a non stick pan and only for 45 min. Came out moist and perfect! Oh so good! Pros: No butter needed Cons: A little time to make it, but so worth it!

Delicious and Moist Healthy Alternative! I am so excited at how well this turned out. I used applesauce instead of oil and used vegan chocolate chips. SO AMAZING! I even cut the sugar and it still was perfectly sweet.

Guilt-free yumminess! Used regular whole-wheat flour and subbed applesauce for the oil. It was deeelish! The choco chips are just the hit of sweetness it needs to feel like a treat, but it is actually healthy! Yum yum!

Tastes too healthy This bread is only decent. I will eat it but I wish I had used a different recipe for my zucchini. I am sure there are other healthy options out there that are more moist. I need it to be a little sweeter. Overall ok; was hoping for better. Pros: Healthy Cons: Heavy, bland, a bitter aftertaste

great for muffins too! I made this recipe but made 12 muffins instead of a loaf (better portion control). Baked for about 18 minutes I think. Also just used regular whole wheat flour since I had it on hand- tastes great- not sure if there would be much difference with the white whole wheat.

Great...yummy Mine came out flat and a bit gummy but it was my fault for trying to make 3 loaves at once! I made 2 loaves with raisins and 1 batch of muffins with chocolate chips, those were my fave :) Pros: Not too sweet,
