Zucchini stuffed with tomatoes, mozzarella and basil make a fresh summer side dish. For the nicest presentation, use long, relatively skinny zucchini.

  • 1/2 cup diced mozzarella cheese, preferably fresh
  • 1/4 cup thinly sliced fresh basil
  • 1/2 teaspoon freshly ground pepper, divided
  • 1/2 teaspoon salt, divided
  • 1 tablespoon white-wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 cup quartered grape tomatoes
  • 1 tablespoon minced shallot
  • 2 medium 2-inch-wide zucchini

  1. Trim both ends off zucchini; cut in half lengthwise. Cut a thin slice off the backs so each half sits flat. Scoop out the pulp, leaving a 1/4-inch shell. Finely chop the pulp; set aside.
  2. Place the zucchini halves in a microwave-safe dish. Sprinkle with 1/4 teaspoon each salt and pepper. Cover and microwave on High until tender-crisp, 3 to 4 minutes. (Alternatively, steam in a steamer basket over 1 inch of boiling water in a large skillet or pot.)
  3. Whisk oil, vinegar, shallot and the remaining 1/4 teaspoon each salt and pepper in a medium bowl. Add tomatoes, cheese, basil and the reserved zucchini pulp; toss to combine. Divide the filling among the zu-canoes.

These are all my favorite summer things in one! Next time I would double the recipe and use the freshest mozzarella I can find.

Delicious way to use your summer veggies We got some zucchini from a friend's garden, and decided to try this recipe tonight. It was delicious. Our only tweak of the recipe was using fresh SMOKED mozzarella, since we had that on hand, and I think we'll probably use the smoked mozzarella again next time we make this, as it added a nice flavor boost. Since it is cooked in the microwave, this recipe is perfect for those hot summer nights when you don't want to turn on your oven. This is a great recipe to use some of the veggies from your garden or the Farmers' Market this summer. Pros: Easy, healthy, tasty, microwave

Very good I don't follow directions very well - I put the filling in raw zucchini and wrapped them in foil and put on the grill over medium heat for 30 minutes. The zucchini were crisp (like I like them) and the filling was nicely heated. They really tasted great. I also used feta instead of mozzarella. Pros: Easy Cons: None

Healthy and Easy Meal I also used fresh green beans & summer squash out of my garden as well. Cut them into small chunks and steamed them for about a minute, then added them to the other ingredients. Didn't have the right kind of cheese so I used the bagged kind you find in the grocery store (4 blended) and added a handful of mini pepperoni. This dish was amazing. My husband loved it too. Fabulous I thought this was great! I didn't have mozzarella to dice, but had some shredded mozzarella. Also used more fresh basil than recipe called for and added a couple pinches of cayenne pepper. Will be making these again! Pros: Easy Cons: None

Zu-Canoes July 29, 2011 The taste was amazing because my Son, the gourmet chef, reminded me of the days of working in the kitchen with a salamandor. At home, the next best thing is the broiler. So instead of serving this with cold innards, I stuck them under the broiler for 4 minutes to firm up the canoe and melt the cheese...YUM and 5 Stars! Pros: Healthy, Tasty Zucchini Cons: Maybe Prep time if it isn't made with love.

Nice concept but a little bland This recipe is a great concept, but I think it needs more zing. The cheese was bland, the veggies are bland. . .I think you get the picture. That said, I think a Greek version of this would be FABULOUS using feta cheese, tomatoes, a bit of red onion, and kalamata olives with a Greek vinaigrette. I am going to try that next week! Soooo good These are delicious! If you want them to look like the picture and more firm than don't heat for 3 minutes. I did and they were mushy but they still tasted awesome. Also, I could barely taste the mozzarella so I think I will omit it next time to save on calories.
