Composed Salad with Pickled Beets & Smoked Tofu

This composed salad is an artful arrangement of greens, hard-boiled egg, smoked tofu, beets and snap peas drizzled with a cool, creamy dill dressing. It's as pleasing to the eye as it is to the palate. We like smoked tofu, but any flavored baked tofu would work well in this recipe. Serve with iced tea.

  • ½ cup reduced-fat sour cream
  • ¼ cup chopped fresh dill
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 6 cups torn Boston or Bibb lettuce
  • 2 cups torn radicchio
  • 4 hard-boiled eggs (see Tip), peeled and quartered
  • 2 medium tomatoes, cut into wedges
  • 8 ounces baked smoked tofu, diced
  • 1 cup diced pickled beets (see Shopping Tip)
  • 2 cups sugar snap peas, trimmed and halved

  1. Combine sour cream, dill, lemon juice, salt and pepper in a small bowl.
  2. Combine lettuce and radicchio in a large bowl; divide among 4 large plates and top with equal portions of hard-boiled egg, tomato wedges, tofu, beets and snap peas. Drizzle about 2 tablespoons of dressing over each salad.
  • Make Ahead Tip: Cover and refrigerate the dressing (Step 1) for up to 3 days.
  • Tip: Eggs, how to hard-boil: Place eggs in a single layer in a saucepan; cover with water. Bring to a simmer over medium-high heat. Reduce heat to low and cook at the barest simmer for 10 minutes. Remove from heat, pour out hot water and cover the eggs with ice-cold water. Let stand until cool enough to handle before peeling.
  • Shopping Tip: Look for pickled beets in a jar near other pickled vegetables in most supermarkets.

Beets? Haven't tried yet because I cannot stand beets!!! Any suggestions for a substitute?

Quick, easy and filling I skipped the tofu and used smoked turkey from the deli instead. Also, didn't have dill on hand, so replaced with some dried tarragon, and I generally try to substitute fat-free sour cream for Greek yogurt. Lastly, romaine lettuce instead of bibb. Flavors might not be precisely as intended, but both SO and me enjoyed this salad a lot. Very simple and good mix of flavors. Normally I have a tough time with radicchio, but the dressing and other components covered the bitterness. I do think this would have been even better with a fresh head of bibb/Boston lettuce--something buttery and a tad sweet. I'll be saving this one for early spring, when the beets, peas, and bibb lettuce are at their peak. Very good. Pros: Filling, quick to make

Really satisfying salad I smoked my own tofu for this recipe and I have to say, it really made this salad stand out! It's filling, fresh and colorful. It made a really great lunch and made my co-workers jealous!

Great Salad!!! This was a great tofu salad!! Its the perfect assortment of vegetables, eggs, and other ingredients make the salad super filling and super tasty. Before tossing, make sure you press the tofu very well. I used a press from TofuXpress and it made the preparation so much easier. Great salad.

Very good Love salads like this that highlight more than just the lettuce - although there is nothing wrong with lettuce. The mix of textures and flavors you can get are great. I always go for something savory, something sweet, something tart...add some creaminess and crunch and you're golden. Try this Pear, Gorgonzola, Walnut salad
