Love this for salad On a low sugar diet I put this over mixed greens for a hearty salad substituting raw coconut nectar for the brown sugar using a simple apple cider vinagrette and garnishing with roasted pumpkin seeds. It's delicious and a keeper diet or not.
Lots of opportunity to make it your own! Tasted great but does every Delicata recipe have to use chili? Next time I'm trying Ginger or Cinnamon or both. My husband thinks that sounds better. I know it will be better for my GERD! I used Turkey bacon not much grease and didn't need it. Pros: Very tasty. Cons: Too much chili for me.
wonderful taste easy to make This recipe yields a tasty dish with the right texture. However I rarely (if ever) use bacon do not like handling it (also not too healthy...) so next time I'll probably add butter instead. Just to add my twist on it: some toasted walnuts don't hurt.
Wonderful combination of flavors - the roasted pear was wonderful! I didn't use the bacon. The chili seasoning was very good but I think that you could also use other seasonings such as curry powder. I will definitely make this again
This dish has excellent flavor. I love the sweet and hot and salty combination. My squash and pears were a little mushy after cooking which left the texture a bit questionable. Next time I will try roasting with a hotter oven for less time.
I second the more bacon comment would recommend at least 3 slices preferably 4 slices. I substituted maple syrup for the brown sugar. Instead of using two pears I used one pear and a persimmon. If you have persimmons you should really try adding one.
Loved this one. It will be a regular. I agree with the comments on the need for more bacon; For those with mushy pears you may not have used a good variety. I'd advise asking your grocer which types hold up to baking better.
