Here's a super-quick all-in-one-skillet breakfast to start your day, loaded with hash browns, spinach, egg and cheese.

  • 1 teaspoon extra-virgin olive oil
  • 1/2 cup frozen hash browns or precooked shredded potatoes (see Note)
  • 1/2 cup frozen chopped spinach
  • 1 large egg
  • Pinch of salt
  • Pinch of freshly ground pepper
  • 2 tablespoons shredded sharp Cheddar cheese

  1. Heat oil in a small nonstick skillet over medium heat. Layer hash browns and spinach into the pan. Crack egg on top and sprinkle with salt, pepper and cheese. Cover, reduce heat to medium-low and cook until the hash browns are starting to brown on the bottom, the egg is set and the cheese is melted, 4 to 7 minutes.
  • Ingredient note: Shredded cooked potatoes can be found in the refrigerated produce section or dairy section of most supermarkets.

Quick and delicious This was awesome!! First of all, it's easy to keep these ingredients on hand because they're all frozen or refrigerated. Second, it's very fast and easy to put together. Third, you only get one pan and one lid dirty, easy peasy. Fourth but most importantly, it's DELICIOUS!! It has great flavor and satisfies my hunger and savory tooth. Pros: Fast, easy, delicious, comvenient Cons: Nothing

I have used a very similar recipe for years. I sometimes omit the cheese because of calories, and add diced tomatoes and avocado just before serving.

Fast, nutritious, low points and delicious! I am on Weight Watchers and was so greatful to find a fast, filling, and tasty low points breakfast that I can make quickly and without a lot of fuss. I used refrigerated preseasoned diced potatoes with steak flavor, so it was extremely flavorful. I also used preshredded cheese, so it was no fuss! Pros: Easy, Fast, Healthy, Tasty Cons: Frozen spinach annoying to break up in microwave

Super easy & really delicious! I sauteed onion with the hash browns & stirred in fresh, chopped spinach. I pushed that aside to keep warm, added a bit of butter & fried my sunny side uppers on the other half of the pan. Plated the potato/spinach mix first & topped with eggs. I will make this often...good & good for you! Pros: one pan wonder. Looks & tastes gourmet. Cons: none.

Not bad Pretty good, but I made it for lunch and had to double or even triple the portion-size listed here. 1/2 cup of hash browns just wasn't going to cut it for me! Like some other posters, I also cooked the hash browns ahead of time because I wanted them nice and crispy. I also cooked up some fresh spinach and then the eggs, and put everything together at the end.

Fantastic! I love, love, love, loved this meal! I served it for dinner with two slices of bacon, a slice of whole wheat toast, and an orange. The seasonings were perfect, the timing was pretty much right on (although I too started my hashbrowns early, and then added the spinach and let it cook a little as well). For my husband, I made scrambled eggs with a little Tobasco sauce since he won't eat his eggs any other way. I just scrambled them in a separte skillet and then put on top of the hash mix to re-warm them when I put my egg on. Next time I think I will add some scallions and chopped cherry tomatoes. Delish! Pros: Pretty easy Cons: None

This is very tasty. I would recommend grating the cheese ahead of time. You do not have to drain the spinach ahead of time if you buy the chopped spinach from a bag as the recipe calls for. YUM!

I also cooked the potatoes and spinach a bit before adding the egg and cheese. I wanted the potatoes to be nice and crispy and didn't want the egg to be too hard. We'll have it again tomorrow!! Perfect!!!!!!
