Easy and Delicious! I made these for the first time for my family last night and it was a huge hit! I followed according to recipe with the exception of salsa-we only had canned and it worked just as well. Fresh would probably taste good too but the flavor from the canned version tasted really good mixed with the beans. The fresh avacado is soooo yummy on top of it! tip: use the smaller tortillas about 4-5 inch across for easy flipping. Also, make sure you don't use too much filling. It makes it hard to flip and it gets really messy. Pros: easy, fun, tasty Cons: none

Simple and delicious Decided to try this recipe when my fridge was practically empty and didn't feel like going to the grocery store. While I didn't have avocado, I ate these with a side salad and they were so delicious and filling. My husband ate them after rugby practice and loved them - and neither one of us is vegetarian! Didn't even miss the meat. This will be my go to recipe when I want a meal in 10-15 minutes. Pros: Quick, not very many ingredients, tasty Cons: Nothing!

Quick, easy, delicious! Nothing wrong with vegetarians, besides the whole not eating meat thing. My modifications: --brown 1/2 lb turkey sausage and a dash of red pepper --make bean mixture and toast in tortilla as directed --open quesadilla, add 1 leaf romain lettuce, thinly sliced tomato, 1/4 turkey, mustard, and mayo. Close and enjoy. This adds the sustenance, kick, and tang the original recipe is just plain lacking. But the beans, salsa and cheese mixture really set it off. Pros: Great base recipe Cons: Vegetarian

This was so easy and quick to make and was really delicious. I added a little more cheese and low fat sour cream on top. I also put the avocado in with the beans and cooked it. I can't wait to make it again!!! Pros: Quick, easy, delicious

Quick and soooooo delicious This was so easy to make and really yummy. I added a little more cheese and put the avocado in with the beans and salsa and cooked it. I also put a little low fat sour cream on top. We each had two and are very full. Thanks for the recipe!!!!!!

Quick, Easy, and Yummy! I'm a full time student working two jobs, so I have hardly any time to eat, let alone eat healthy. This is such a great option to have because it's really cheap, really easy, and really healthy! I also love that it's so easy to personalize. I added some spices that really made the dish. I will definitely make it again! Pros: Delicious, Healthy, Quick, Cheap Cons: Not a complete protein

Super awesome quick meal! As a full time student, dinners have to be fast but healthy. I made this tonight for my family and everyone LOVED it! I left out the salsa because my daughter doesn't eat anything spicy, and I used rice cheese to make this vegan. It was awesome, and my daughter even requested it for her lunchbox tomorrow! Pros: Took less than 20 minutes, my 3 year old loved it, filling, healthy Cons: None
