Yum! This was a very simple and delicious recipe that I will definitely make again. The only thing I changed was adding more cheese (like 3X the amount) because that's the only was it is manageable to hold and eat. It's a keeper. Pros: Taste, healthy

Quick, Easy, and Delicious This was a great dish! It took me about 10 minutes to make and my entire family, including the nonvegetarians, loved it! The only this i would suggest is adding a little bit more cheese to hold the filling together Pros: Very fast, filling, inepensive

Fast and Delcious If you like Mexican food, this is tasty AND healthy. These were so easy to prepare. I stock up on the ingredients to make this recipe now, so on a night that i have to work late or am just to tired, I make these crowd pleasers. I love avocado, but it's hard to keep it on hand and available for whenever, you know? So I purchased 100 Calorie packs of Wholly Guacamole. I put them in the freezer and then when I make this, I just take out a pack or two and I put it in a cup of water and it thaws quickly. This way I can keep ingredients on hand for whenever I want to make this. Pros: Fast, Easy, DELICIOUS Cons: You cant' stop eating them :)

Awful!!!!! This was absolutely AWFUL!!!!!! I followed the recipe to a tee, and it turned out horribly. The filling was so blobby that you couldn't even eat a bite of the quesadilla without it falling out all over you. Will never make an Eating Well recipe again!!!!!!! This was not even edible

Delicious! I made these on my 30-minute dinner break and my husband LOVED them! I ended up adding both diced onions and corn into ours, which I thought really completed the Mexican cuisine. You can make them as spicy as you'd like - we used hot salsa and loved every bite! Pros: Quick, easy, delicious and healthy...what more can you ask for?

Did not even miss the meat I used habanero cheese instead, but no avocado. This was delicious. I did not even miss the meat. Pros: easy, inexpensive, filling

So SOOO Good!! This dish is very quick and easy to make! This week is midterms for me (college kid) and it's a quick enough meal for me to squeeze into lots of studying time. I've been trying to eat healthy but also on a budget, and I'm also a huge mexican food person so this was perfect! I didn't make any changes to the recipe, and it was great as is but next time I want to try adding some cumin to get a lil more mexican flavor. Will definitely make this again. Pros: Easy, Healthy, Very quick, Great Flavor

Easy and kid friendly! I made these for the first time tonight with just a slight variation. I kept everything the same except that I added some Tyson Grilled and Ready pre-cooked diced chicken (in bags by lunch meat at stores). It added a little more texture to the meal. Will be making this again! Pros: Fast, flavorful, Cons: none

SO SO Good! made this and it turned out fantastic! I used fresh guacamole with this and it was so good I almost died. I made sure to the get the smaller option of a quesadilla bread and didn't fill it up too much so that I was able to successfully fold over and flip without all the insides spilling out. Tip: the cheese serves as a glue almost to the beans and you want to make sure that you don't use too much filling! it will make it so much harder to fold and flip if you use too much. Pros: Easy, fast, inexpensive, healthy alternative, yummy Cons: none
