Cherry Ice Cream Pie with Chocolate Cookie Crust

This cherry ice cream pie is a simple summertime sweet treat! If you use frozen cherries, the pie will have a fun purple hue.

  • 3 cups reduced-fat “light” vanilla ice cream, softened
  • 11/4 cups chopped pitted fresh or frozen cherries, divided
  • 1 9-inch chocolate-cookie pie crust
  • 2 tablespoons mini chocolate chips

  1. Gently combine ice cream and 1 cup cherries in a large bowl. Transfer to the crust and garnish with the remaining 1/4 cup cherries and chocolate chips. Freeze until firm, at least 4 hours.
  • Make Ahead Tip: Cover with foil and freeze for up to 1 week.

Unfortunately, I didn't like it. Maybe it was the lower quality ice-cream I used? Maybe my freezer was to cold? But this didn't turn out very nice! There weren't any pie crusts in the super-market at the time, suitable. So my girl friend and I made our own out of crushed up cookies. This was the only nice part of the dish. I used fresh cherries, pitted and quarted them. Added in a cheap ice-cream. Froze it. It turned out rock hard. Took 2 minutes just to hack a peice off. Allowing it to sit out for a while didn't help, as it made the ice-cream not taste nice, and took far to long to soften up. The cherries no longer tasted nice, and were also very hard. Would have been nicer had I had the ice-cream with the fresh cherries on top, by themselves. Although, in all honestly, I think this all may have came down to the poor quality ice-cream, and possibly the freezer being to cold, considering how much everyone else seems to have loved it. Pros: Can't think of any. Cons: Hard.

I made this as a last minute dessert, the only pie crusts at the store that werent broken were the shortbread kind and they were out of cherries so I used strawberries. I also used a fat free vanilla frozen yogurt and the pie turned out Great !!!

Easy and delicious! Next time I would mix the chocolate chips inside the pie (um, maybe add a few more...) and drizzle with a bit of chocolate sauce after slicing. A keeper!

This was sooo good! I've never made an ice cream pie before, it was surprisingly easy. This is a summer keeper!!!
