This was fantastic for a rainy May day. I doubled the recipe and added a mushroom blend of shitake oyster and portabellas plus some fresh shelled peas for a little more green. I also substituted kale for some of the spinach. The broth is delicious. I may make this without the sausage the next time and just use a larger amount of mushrooms. Wonderful stew.
Delicious Filling and Warming for your body I made this stew on a chilly November evening and it smells great when cooking. I had to use sweet Italian sausage instead of hot so I added a tsp. of crushed red pepper when I started cooking. I used 1 1/2 cups Marsala wine instead of white (that's all I had on hand) chopped fresh kale instead of spinach and Chick Peas instead of Cannolini beans and it still came out tasting sooo hearty and delicious. I made toasted garlic bread to compliment the stew very tasty. Give it a try the family will enjoy it on a cold day! Very easy to prepare recipe. I made this for my family (husband 4 and 5 year old) and they requested that I add this to the repeat list. I used fresh dill and al fresco sweet italian sausage. The flavors were very fresh. The potatoes and the sausage gave a slight heartiness to the stew but the spinach leeks and dill kept the flavors of summer. Loved it.
Easy to make Easy to make good flavor but I found the spice from the hot Italian turkey sausage too over powering. I would make next time with a few modifications: sweet turkey Italian sausage more broth (about 8-12 oz) and a second can of beans. Pros: Flavor veggie based Cons: Too spicy for me needs more beans
I tossed everything in the instapot for 10 minutes. I omitted the sausage as I didn't have any on hand and used Black eyed peas instead of cannellini beans. I also used all of the leek instead of adding spinach as I didn't have any handy. I did add some Italian-sausage-type-seasonings such as caraway seed and basic Italian seasonings. Perfect soup on a cold night!
This is light and satisfying at the same time. Next time I will double the sausage as my husband complained that it was too light on the meat (didn't bother me though). Pros: Soul-warming comfort food Cons: NULL
My kids (6 and 4) and my picky husband all thought this was delicious. I also used frozen spinach and didn't use the scallions since I forgot to get them. The turkey sausage and leeks were an excellent combination. I'll definitely be using this recipe again.
Tasty and Satisfying This recipe was easy to make and relatively quick. The prep time took a bit but it wasn't a pain. The aroma from all the ingredients permeates throughout the kitchen as you're cooking it which is an awesome thing. It's a great meal for those cold days when you need a good warm up. My wife loved it and asked if I would make it again she's hooked and so am I. Pros: Easy to make quick hearty
