Salmon salad served on tangy pumpernickel bread makes for an easy dinner—a double batch will give you lunch the next day.

  • 2 6- to 7-ounce cans boneless, skinless wild Alaskan salmon, drained
  • ¼ cup minced red onion
  • 2 tablespoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon freshly ground pepper
  • 4 tablespoons reduced-fat cream cheese (Neufch
  • 8 slices pumpernickel bread, toasted
  • 8 slices tomato
  • 2 large leaves romaine lettuce, cut in half

  1. Combine salmon, onion, lemon juice, oil and pepper in a medium bowl. Spread 1 tablespoon cream cheese on each of 4 slices of bread. Spread ½ cup salmon salad over the cream cheese. Top with 2 tomato slices, a piece of lettuce and another slice of bread.

Great for someone counting calories that needs to whip up something quick. I used reduced fat garden herb cream cheese to give it some oomph. Toast your bread to give it more of a warm dinner type of feel. I love to cook and I am experienced, but I truly appreciate how beginner-friendly this is which is CRUCIAL for people trying to become aware of what and how much they are consuming all while being a busy human being. High protein and fiber will keep you feeling sufficed! PS-Costco sells canned wild caught Alaskan sockeye salmon.

And to Make It Even More Healthy... 1) Use wild-caught red sockeye salmon rather than pink salmon; 2) Try substituting 4 oz. of ripe avocado for the cream cheese. 3) Try substituting a sprouted grain bread for the pumpernickel. 4) And of course use organic ingredients whenever possible.

Educate yourself about salmon first. The recipe calls for wild Alaska salmon. That is a good start. But the best sandwich will only be had with sockeye salmon. I am from wild Alaska salmon country and there is a world of difference between spring, chum, coho, etc. and sockeye. It costs more, but it tastes far better and usually has the best consistency. Treat yourself.

I've been hearing a lot of good things about salmon recently in terms of health benefits. Unfortunately, I've never really cared for salmon, but I actually liked this sandwich. It didn't taste too salmony at all. It tasted more like a tuna sandwich to me. As a 17 year old with little to no cooking experience, this recipe was so easy and nearly impossible to mess up. I made it all by myself! My mother was impressed. I used regular whole wheat instead of pumpernickel. We loved it. Pros: Easy to make, tasty, healthy

love it! I am not one to eat canned meat... but I got some canned salmon that was on discount. searched the web for a good recipe to try and this one stood out... no mayo... or alot of fat. Love it... I could use a bit more lemon and a little bit of salt but it is really good! I was concerned but it is rather surprising I want to go back to the store and buy more! red pepper flakes would be good in this too for just a bit of pop. so yummy!! should of taken a pic... but didn't now it is gone... ;) Pros: the lemon gives it a nice tang Cons: I added a bit of avacado didn't need it but it is still really good

Filling! I enjoyed this meal for its ease and nutrition. I find salmon from packets is quite a challenge to flavor. I used 2- 5oz salmon packets and when I added the seasoning measurements as written I tasted only salmon. I used almost a 1/4 cup of lemon juice and still barely tasted it. The extra lemon juice created extra-runny salmon salad, which resulted in soggy bread. Pros: healthy Cons: needs flavor

My husband loved it It needs more crunch I am considering adding spring mix instead of romaine lettuce next time as well as a bit of salt. Overall I really felt good about eating this for dinner and cannot complain if my husband Loved it. Pros: healthy, quick, lemony Cons: needs more crunch
