Get an afternoon pick-me-up with these mocha-flavored frozen treats. A little of the cocoa settles at the bottom as they freeze, making a special chocolaty surprise on the top once the pop is unmolded.

  • 2½ cups hot brewed coffee
  • 4-5 tablespoons sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup half-and-half
  • ¼ teaspoon vanilla extract
  • Pinch of salt

  1. Whisk coffee, sugar to taste and cocoa in a medium bowl until the sugar has dissolved. Whisk in half-and-half, vanilla and salt until combined.
  2. Divide the mixture among freezer-pop molds. Insert the sticks and freeze until completely firm, about 6 hours. Dip the molds briefly in hot water before unmolding.
  • Make Ahead Tip: Freeze for up to 3 weeks.
  • Equipment: Ten 3-ounce (or similar-size) freezer-pop molds

4 - 5 tablespoons of sugar is a lot more than 7 grams of carbs. Unless I am missing something, these may be yummy but they sure are not healthy. And, you really should list the grams of added sugar. Cons: Too much sugar

These are delicious! I was looking for a quick and easy popsicle recipe with ingredients I had on hand. I didn't have the freshly brewed coffee, so I substituted instant coffee made with water and I also used milk instead of half and half and it turned out GREAT! (Did I mention I love coffee?) True to it's name, it's very icy (as opposed to creamy) but does pack some great flavor. I actually made this recipe twice (which shows my satisfaction) and the second time I froze it into my popsicle molds, took it out, and then scraped flecks off with a fork into a glass for an instant mocha granita that looks very fancy!! (Usually granitas are made by freezing an ice mixture such as this in a shallow pan, and breaking up the ice crystals with a fork every few hours.) In a nutshell, VERY delicious and simple recipe and I would recommend this recipe 100%!
