Chicken turns this Greek-inspired salad into a substantial main course. Feel free to substitute other chopped fresh vegetables, such as broccoli or bell peppers, for the tomatoes or cucumber. Use leftover chicken, store-roasted chicken or quickly poach a couple boneless, skinless chicken breasts while you prepare the rest of the salad. Serve with pita bread and hummus.

  • 1/3 cup red-wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped fresh dill, or oregano or 1 teaspoon dried
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 6 cups chopped romaine lettuce
  • 2 1/2 cups chopped cooked chicken, (about 12 ounces; see Tip)
  • 2 medium tomatoes, chopped
  • 1 medium cucumber, peeled, seeded and chopped
  • 1/2 cup finely chopped red onion
  • 1/2 cup sliced ripe black olives
  • 1/2 cup crumbled feta cheese

  1. Whisk vinegar, oil, dill (or oregano), garlic powder, salt and pepper in a large bowl. Add lettuce, chicken, tomatoes, cucumber, onion, olives and feta; toss to coat.
  • Tip: If you don't have cooked chicken, poach 1 pound chicken breasts for this recipe. Place boneless, skinless chicken breasts in a medium skillet or saucepan. Add lightly salted water (or chicken broth) to cover and bring to a boil. Cover, reduce heat to low and simmer gently until the chicken is cooked through and no longer pink in the middle, 10 to 15 minutes.

Wow, this is a good salad! It's 6pm. We have post-dinner guests coming at 6:30pm. I remember I have this salad recipe and quickly throw it together. At 6:18pm my husband and I sit down to eat. He takes a bite and exclaims, Wow! This is a good salad! And you know, it really was! Definitely making this one again! Pros: quick, easy, flavorful, healthy

Fabulous and Easy! I didn't add the lettuce to all of it right away. That way I can pack lettuce in a separate bag and mix it at work, then the lettuce doesn't get soggy. Pros: Quick and tasty Cons: none

Easy to make, yummy to eat I made this salad last night. It was easy to prepare. I served it with hummus and whole wheat naan bread. It was a big hit at our house. Delicious and very satisfying. I'm looking forward to making this meal again.

This is Going into the Rotation! We are in the midst of another overwhelming Maritime winter -- sick of stews, sick of chili. Needed a bright, healthy and child friendly meal to perk us all up. This is the easiest meal I've put together in a long time. I bought a bbq'd chicken from the supermarket and put this together in no time flat. Followed the recipe to the letter. The flavours were so wonderful. The kids devoured the whole salad and asked for the same recipe tonight. Pros: Quick, Easy, Colourful!

Simple Wonderful Salad to make I did not have any red onions but substituted a small hand full of green onions, poached my chicken. It made a big bowl between me and my mom we had 2 good size bowls and still have some for my lunch and hers. I am always looking for good simple salad recipes. AWESOME USE OF LEFTOVERS! My spouse & i loved this meal. It was refreshing and satisfying on a hot day. It was wonderful as written and i look forward to playing with different vegetables ; maybe kick up the dressing as well. Pros: delectable, healthy, and best yet, an easy meal. Compare amounts I like the real Greek sheep's milk feta that they have at Trader Joe's, will have to compare the calories w/cow feta to see if it's any different. Can't wait to make this, but also would like to know if I make a larger amount for the family how many cups of the finished product counts as one serving? Light & Fresh - Delicious Followed the recipe exactly and it was wonderful. It was simple to make, we had it for dinner tonight with some french bread. Perfect as a light meal, not necesarry to have anything else with it. Pros: Healthy, simple, filling without being heavy Cons: None
