I think this soup was awesome. It only took 15-20 min. prep time. I followed the recipe with the exception of: No Salsa No yogart No celery (because did not have) I did not have cilantro except dried sprinkled it on as it was simmering. Now the kicker is I mistakenly picked up red kidney beans and was cooking when I discovered they were not black beans. So went to pantry- found a can of Bush Cocina Latina Frijolas Negros Machacodos seasoned. That took the place of using the blender to mash. It added spice and thickening to the soup. I also use some left over ham and browned it with the onions peppers carrots. This soup turned out so good that I will make again. I saved my error by using the black bean Machaecodos. I don't think it changed the recipe that much but a wonderful taste. I just had to use my imagination to save it when I found out kidney beans were in there. My mind was thinking black beans but the can was kidney. LOL Pros: Fast delicious easy I can't eat enough of it. Cons: NONE
My picky eater loved it! I had to have a soup for a church covered dish luncheon and wanted something easy. After finding several options I asked my teenage kids for their preference. They picked this one. It was super easy and quick. My son who does not eat soup at all tasted it and asked me to make more to make sure there would be enough for the lunch. I made a second batch and combined the two. I offered the cilantro and sour cream on the side so everyone got what they wanted. No leftovers - always a good sign. We loved the little punch of heat from the salsa. I'll be making this again! Pros: Quick and easy
Tasty soup especially if you let it sit for a little bit! The day I made this soup it was kind of bland like it was missing something. The next time I ate it (3 days later) it was perfect!!! I will definitely put this into my regular lunch rotation. Pros: Cheap Easy
I am enjoying a bowl of this soup as I write the comment! Though has to be said I have continued to tweak the recipe since the first attempt. I don't use salsa any more instead use tomatoes and spices. The latest version has red peppers and celery in too and always add yoghurt (not sour cream ) lime and cilantro. A delicious soup even on the first making not sure why there were negative comments. Puzzled by the reference to tortilla soup.....nothing like and not meant to be!
Bland This was so bland I'm sorry. I had to add salsa way more salt chili powder cumin garlic powder black beans and it still tasted nothing like tortilla soup. A total waste. Cons: Bland pureed onions made a gross texture in the soup I had to add so much to fix it
Great healthy soup I didn't use the canola oil as onions make their own liquid. I added diced carrots and garlic as well as celery to the saute. 1 can of black beans and I didn't puree any of it. I made a cilantro and lime rice and put it over it. Don't leave the lime out in the end...it makes the soup awesome. Pros: A quick put together meal for nights you didn't think ahead.
Good basic recipe..Adding some smoked turkey ( or you can even use ' foturkey) cut into pieces is a great addition to this soup..I also added a can of drained ' Ranch beans' and that really made the flavor pop. I served w heated flour tortillas and thats dinner!! Pros: Easy ingredients so that you can ' amp up' the flavor.
I wouldn't change a thing I made this recipe just as is and the only thing that I might change is the use of chicken stock instead of water. I really liked this fast and easy soup. This soup is filling and could easily be served as a main dish with some hearty bread and a salad on the side. I will make this recipe again. Pros: Very filling soup
Black Bean Soup I add chopped red bell peppers large onion to oil. Saute til translucent. Add chicken broth in place of water. I use Walmarts great Value black bean and corn salsa...one jar. Also I add 2 cups or more cooked elbow macaroni to the soup. Add a Tbls. more cumin...now you have a great soup! Pros: A quick tasty soup Cons: Needs a little more
This soup was very easy to make using the canned beans. I mixed it up a little and used black & Great Northern beans. I tasted it before adding extra ingredients and thought it was already very good but I went ahead and added some garlic and Mexican Oregano because I did not have quite enough salsa. (We put garlic in almost everything.) This was delicious! We have three boys with very different tastes but everyone had seconds of this one. Can't really think of any cons even if I tried. Thanks for sharing! Pros: Easy & inexpensive to make can tailor recipe to different tastes tastes delicious Cons: None!!:)
I loved this soup! This soup was so good and very easy to make -- The only I added was a small can of mexican corn mix -- it added some sweetness to it -- I loved it -- looking for something easy to warm up -- This is a very tasty filling soup -- Pros: very easy to make
My husband loves this soup. He likes it only half-pureed so that it is still chunky. This is very quick satisfying and you can probably make it with what you have in your pantry. No hard-to-find ingredients!!
Very easy and delicious This recipe passed my big test-- it got a thumbs up from my three picky eaters (4 8 & 9 year olds!). Per previous reviewers I substituted chicken broth for water and added another can of beans-- great easy tasty soup! Pros: Quick easy to make
My boyfriend and I both thought this was delicious. In my weight loss efforts the hardest thing for me isn't eating healthy it's reducing the amount that I eat so this soup is great for me since it's very low in calories so I can eat until I feel full and not have overdone it.
I made it for lunch and my husband and I both thought it was too watery and there was some flavor lacking. However I ate it for dinner tonight and it was better now that the flavors have had a chance to develop. Still a little too watery next time I'd reduce the water to 2 cups and add more later on.
I LOVE this soup. I made it last night for dinner and my husband and I devoured it. I added a can of garbanzo beans and the entire can of salsa instead of just 1/2 a cup and used a large onion but followed the rest of the recipe. I'm eating a bowl of it right now at work for lunch... and I might just eat it again for dinner tonight! If you feel like you need meat it would be a good basis for stewed chicken (grab a rotisserie one at the market) or lean beef. But it was GREAT without meat.
My husband and I loved this and I have already made it a second time - making a double recipe I used a lot more onions because we love them leave the chili powder on the table to add as needed. It does have more flavor and seems to thicken on day 2. This is a keeper. mmurphy
So good just as written! Only change i made was to add a garlic clove with the onion. My hubby who snubs his nose at anything without meat had two bowls! Will make a double batch next time because my teenage sons are looking for leftovers.
While this soup was a bit watery when it was fresh it tasted great after a day in the fridge. Definitely don't skip the lime it adds a very nice tang. One caveat however - while we all know that beans tend to promote er flatulence this soup seems especially potent. If I'm going to a social event later in the day then I won't eat this.
This soup is so good! I only use 2 1/2 cups of water and it comes out to a good consistency. The second time I made it I added a little more salsa and threw in a chopped tomato and it was even better. I used nonfat plain yogurt as a substitute for sour cream and I couldn't even taste the difference.
This is an absolute winner! I make it often and it gets a blue ribbon every time. The basic recipe is very cheerful about having little changes and additions made to suit one's mood and/or what's in the pantry. hopesprings
This recipe is an excellent jumping off point for you to embellish if you're in the mood or it's great just as it is. Normally I add one crushed clove of garlic substitute chicken broth for the water and add salt only at the end since the broth generally has enough sodium. If I double the recipe then I stick with one tablespoon of chili powder but double everything else. At first I thought I'd want to puree all of the soup for an overall creamy texture but I found following that part of the recipe truly proves to be best (to our taste at least). It definitely thickens up overnight so don't be afraid to use all 3 cups of liquid. And as another reviewer mentioned it's best not to eat this soup the night before a big meeting if you know what I mean...
Delish! This soup was a crowd-pleaser. I made a few slight changes: added 4 cloves of garlic after the onions started to soften used 4 cups of chicken broth with one cup of water used 4 cans of black beans used entire large jar of spicy salsa added frozen corn added cilantro to soup at the end of the cooking process This was a total hit. I served the soup over yellow rice and it was incredibly filling. Pros: Fast Easy
Yummy! This is really good. I made the soup exactly like the recipe said. It was pretty good but I added and extra squirt of lemon juice to my individual bowl a little salt and then mixed a spoon of sour cream and it really enhanced the flavors. Pros: Easy to make fast tasty
