This easy pizza-inspired roll-up is a kid-pleaser.

  • 1 8-inch whole-wheat flour tortilla
  • 2 tablespoons prepared pizza sauce
  • 12 leaves baby spinach
  • 3 tablespoons shredded part-skim mozzarella

  1. Place tortilla on a plate and spread pizza sauce over it. Top with an even layer of spinach and sprinkle cheese on top. Microwave on High until the cheese is just melted, about 45 seconds. Carefully roll the tortilla up. Let cool for 10 minutes before slicing into pieces, if desired.
  • Make Ahead Tip: Cover and refrigerate the pizza roll-up for up to 1 day.

I thought this was a great idea and I added Genoa Salami. My kids did not touch it. I was disappointed because I thought what a cool idea. Needless to say, I won't make it again.

Excellent! I love these! I don't even melt the cheese. Mix the ingredients, cut in half, and take it to work. It really is very filling, there's a great balance of nutrition in it. I may also add turkey pepperoni next time. One very important thing... don't use bottled pizza sauce. It doesn't taste very good. Look up Exquisite Pizza Sauce on All Recipes, and mix it yourself, it's easy, cheap, at tastes 10x better.

I didn't add the spinach and instead used pepperoni. It was pretty good and very filling.
